Beef short ribs with brocolli stems and potatoes – Στηθοπλευρές μόσχου με παραπούλια μπρόκολου και πατάτες

Σήμερα μαγείρεψα στηθοπλευρές μόσχου με παραπούλια μπρόκολου και πατάτες. Είναι ένα πιάτο χειμωνιάτικο, γευστικότατο, και οικονομικό. Θέλει όμως χρόνο και μεράκι για να γίνει σωστά.

Αρχικά προμηθεύτηκα το κρέας από τον φιλότιμο χασάπη μου, που μου είπε ότι τρώγει αδιαλείπτως βραστές στηθοπλευρές. Τοποθέτησα αμέσως το κρέας σε ελαφρύ διάλυμα άλατος και νερού, και το άφησα όλο το βράδι.

Την άλλη μέρα πρωί πρωί έβαλα σε μια μεγάλη κατσαρόλα το κρέας με νερό, ένα κρεμμύδι, μια κόκκινη πιπεριά, και δύο καυτερές πράσινες. Προσέθεσα πιπέρι, μοσχοκάρυδο και μπαχάρι. Δεν χρειάζεται αλάτι, γιατί έχει το κρέας. Άφησα σε χαμηλή φωτιά να σιγοψήνεται για 3 ώρες.

Στο μεταξύ επισκέφθηκα μια φάρμα στο Κάτω Σούλι, όπου βρήκα φρεσκώτατα παραπούλια μπρόκολου, και πατάτες από τη Μεσσηνία.

Έπλυνα τα παραπούλια και τα έβαλα σε μια μεγάλη κατσαρόλα με λίγο από του ζωμό του κρέατος, έκλεισα τη κατσαρόλα με το καπάκι της και την άφησα για 10 λεπτά σε πολύ δυνατή φωτιά. Στη συνέχεια έσβησα τη φωτιά και τα άφησα σκεπασμένα για να ολοκληρωθεί το ψήσιμο τους.

Η τελική πράξη αφορούσε την σάλτσα. Με τον υπέροχο καυτερό ζωμό του κρέατος έφτιαξα μια ελαφρά σάλτσα προσθέτοντας λίγο αλεύρι και κόκκινο κρασί.

Σέρβιρα και τα τρία συστατικά μαζί, καλύπτοντας την πατάτα και το κρέας με την σάλτσα.

Ομολογώ ξεδιάντροπα ότι το αποτέλεσμα ξεπέρασε τις προσδοκίες μου. Το κρέας ήτανε σκέτο λουκούμι. Τα παραπούλια τρυφερά και νόστιμα, η πατάτα θελκτικά στη μέση των πάντων, για να δίνει ένα ήπιο τόνο στην συγχορδία των γεύσεων.

Καθώς γράφω τώρα συνειδητοποιώ ότι το αστέρι του πιάτου ήτανε τα παραπούλια. Γεύση, υφή, επίγευση εξαιρετική. Το κρέας συνόδευσε υπέροχα, αλλά ήτανε συνοδός.

Ένα ξινόμαυρο πάει φίνα με το πιάτο αυτό.

Ελπίζω να αρέσει και σε εσάς όρο άρεσε και εμένα.

Υστερόγραφο. Υπάρχει βέβαια και το δωράκι. Ο ζωμός του κρέατος είναι φάρμακο. Ομολογώ ότι τον τίμησα δεόντως πριν απολαύσω το πιάτο, και μάλιστα περισσότερες από μία φορές, απλά προσθέτοντας λίγο λεμόνι.

Ο Juan Mari Arzak είναι ένας από τους πιο σημαντικούς σύγχρονους μάγειρες. Έχει τρία αστέρια Michelin κάθε χρόνο συνέχεια από το 1989. Το εστιατόριο του είναι μια οικογενειακή επιχείρηση από το 1887. Τον Δεκέμβριο του 2003 είχα την ευκαιρία να επισκεφθώ το εστιατόριο  του στο San Sebastian, στη χώρα των Βάσκων.

Ομολογώ ότι είχα μεγάλη αγωνία. Θα πήγαινα για πρώτη φορά σε τριάστερο εστιατόριο.

Ευτυχώς στο διπλανό τραπέζι ήταν ένα ζευγάρι από τη Μαδρίτη και πιάσαμε κουβέντα οπότε έσπασε η ένταση. Όπως συνηθίζεται, στα εστιατόρια αυτά συνήθως δεν παραγγέλνεις α λα καρτ, αλλά σου προσφέρουν το μενού που έχει ετοιμάσει ο μάγειρας. Έτσι έκανα κι εγώ, έτσι και οι διπλανοί.

Καθώς λοιπόν άρχισε η διαδικασία, και μετά από δύο ποτήρια κρασί, χαλάρωσα και μπόρεσα να σηκώσω το κεφάλι και να αρχίσω να παρατηρώ την πελατεία. Εκείνο που μου έκανε εντύπωση είναι ότι οι περισσότεροι πελάτες ήταν ντυμένοι απλά, άνδρες και γυναίκες, πολλοί είχανε έρθει με τα παιδιά τους, και η ατμόσφαιρα ήτανε περισσότερο ατμόσφαιρα του εστιατορίου της γειτονιάς, παρά του τριάστερου εστιατορίου πολυτελείας. Ηλικιακά η πελατεία ήτανε κατά μέσο όρο κάτω από τα 40.

Κάποια στιγμή παρουσιάζεται στο τραπέζι και ο ίδιος ο μάγειρας.  Πιάσαμε την κουβέντα με την βοήθεια των διπλανών, γιατί ο Arzak δεν μιλάει αγγλικά, κι εγώ δεν μιλάω ισπανικά. Αφού συστηθήκαμε και με ρώτησε αν μου αρέσει το φαγητό, δεν μπόρεσα να κρατηθώ και του είπα ότι βλέποντας την πελατεία έχω την αίσθηση ότι είναι οι γείτονες που ήρθανε να φάνε στο αγαπημένο τους εστιατόριο.

«Μα βέβαια, έτσι είναι»,   μου απάντησε ο μάγειρας, «τους περισσότερους τους ξέρω χρόνια τώρα, και τις οικογένειες τους, εγώ γι΄ αυτούς μαγειρεύω, και είναι οι πιο αυστηροί κριτές μου.»

Σημειώνω ότι οι τιμές στο εστιατόριο ήτανε στο ένα τρίτο των τιμών ενός τριάστερου στο Παρίσι.

Τα γράφω αυτά επειδή σε ένα κόσμο παγκοσμιοποίησης, και αποθέωσης της γκλαμουριάς και του συστήματος των υπέρλαμπρων αστεριών, ο Arzak παραμένει τοπικός, σε απόλυτη αρμονία με αυτό που οι Γάλλοι ονομάζουν  terroir, εντοπιότητα,  και τα αυτιά ανοιχτά στο τι θα πούνε οι γείτονες πελάτες του.

Αυτό δεν είναι τυχαίο. Οι Βάσκοι είναι μια κοινωνία με ισχυρούς δεσμούς μεταξύ των μελών της, με πολιτιστικές καταβολές αιώνων και διατηρούν τις παραδόσεις και τον πολιτισμό τους με θρησκευτική ευλάβεια. Το δε γαστρονομικό επίπεδο είναι πάρα πολύ υψηλό. Στη χώρα των Βάσκων θα φας καλά ακόμη και στο μικρότερο χωριό.

Έτσι ο Arzak μπορεί να παραμένει τοπικός και Βάσκος και περήφανος γι’ αυτό, σε ένα κόσμο που δείχνει να χάνει τον τοπικό χαρακτήρα στο όνομα της διάχυσης και ομογενοποίησης των πάντων.

Top Gastronomic Destination in Greece: Papaioannou Fish and Seafood Restaurant in Mikrolimano, Piraeus

I visited Papaioannou’s Fish and Seafood Restaurant in Mikrolimano, Piraeus, on a busy Sunday lunch time. The maitre D informed us that due to the holidays the variety of dishes is not as wide as it usually is. This was a most welcome first sign of the attention the restaurant pays to the quality of its ingredients. What followed confirmed this in the most positive way. Papaioannou Restaurant is a top gastronomic destination in Greece.

Sea urchin eggs.We started with the eggs in their own natural juices and nothing else. No salt, no lemon, no olive oil. As it should be. As mother nature gave it to us.

The accompanying drink was ouzo. If you do not like ouzo, you may try tsipouro, or a dry white wine with high acidity, like asyrtico.

Red mullet sashimi followed. It needed no dressing whatsoever. But eating an olive and a leaf of rocket after tasting the fish was sensational.

Crayfish tartare.This is by far the best crayfish dish I have ever tasted. You cannot imagine the sweetness, the kindnes of the flesh as it unleashes its flavours in the unuspecting and unprepared oral cavity. It is so captivating that it continues to unravel its magic until it has reached the lower depths of the oropharynx.

Fried baby cuttlefish. The flesh melts in your mouth, while the crispy ink explodes in in millions of parcels of pleasure. Infinity as a sensation must be this bombardment of the taste buds by these agents of hedonism.

Grilled squid sweet as sin cand tender as desire ame next. The chef had given it just a touch of olive oil for the grill, and a light sprinkle of salt. It needed nothing else. No lemon, no extra salt.

Grilled grouper.The flesh is moist, gelatinous, full of the aromas of the sea, soft yet firm. Eating in Papaioannou is not just an experience, it is an adventure. Dear reader, plase take a second to note that there is no dressing whatsoever on the fish, just the salt the chef put on it while on the grill. This is not an ommission, it is a deliberate act. No dresing is nedded! Because it will distort the gastronomi message, muffle the sounds of hedone emanating from the body and mind of the patron.

Grilled red mullet filet.It must be very few people on this planet who can perfect the grilling of red mullet’s skin to a degree that it complements the juicy succulent flesh in a way that makes one believe in miracles. At the end of the day, metaphysics must have a physical grounding, and it might very well be this dish.

Fried red mullet filet. The chef, George Papaioannou has a reputation for frying fish to perfection. He lived up to it. The filet of flesh was melting in the mouth, releasing all the flavours of the red mullet’s skin. And as always with fresh fish, a sweetness enveloped every sensation in the silky delusion of never ending pleasure.

Grilled sea bream. It was time to return to reality and the grilled sea bream pulled it through.

The grilled mediterraneam slipper lobster (kolochtypa) ended the feast. This was an ode to the endless adventure of texture interweaved with flavour.

As I now recover from the flood of sensory stimuli that was mercilely unleashed against my cells I can say without any hesitation that Papaioannou is quite possibly the best fish and seafood restaurant in Greece today.

In addition to the food, service is top class. The team is professional, friendly and efficient.

The location in Mikrolimano is ideal for a long lunch. We spent something like 4 hours and enjoyed all variations of light on the sky and the sea.

 

 

 

 

 

 

 

 

 

 

Restaurant Boroa Jatetxea – Second visit

Back in 2015 I wrote about my first visit to the Boroa Jatetxea Restaurant. I write this following my second visit, which took place in November 2016.

The converted 15th century farmhouse is a wonderful building, spacious and “warm”. Do not let the rural setting fool you. This is a one Michelin star restaurant.

Íñigo Elorriaga, a Basque who lives in nearby Gernica (Guernica), is the chef in charge of innovation.

Jabier Gartzia Ruiz, a native of Gernica, is the head chef.

Oxtail capuccino came as a welcome drink and it was delicious! Light enough not to overpower the senses, but still capable of providing flavor, it was smooth and warm.

Chorizo is always welcome on my plate, especially this one that was accompanied by a sauce that had all the flavor of this wonderful sausage.

Slightly smoked European eel and avocado in spiced quince veil over foie gras with citric aroma was my starter. An absolute winner, a dish I could again and again without ever getting bored.

This is what great cooking is all about.

Cod tasting (grilled, vizcaina and pil pil) was my main course. I have a special devotion to salt cod and it cannot get any better than what I taste in Basque Country.

The dish has three pieces, wach cooked in a different way.

The first is pil-pil, which is a traditional Basque preparation. The sauce is an emulsion of olive oil and the cod’s juices.

The second piece is “vizcaina”, another local preparation, with a thich red sauce. The purists say that the sauce should be made only with red peppers, that is without any tomatoes. Today it is more often than not that you find a tomato thrown in the sauce.

The last preparation is grilled. This is a “nowhere to hide” preparation. The smallest fault of the fish will reveal itself on the grill, as well as the cook’s ability to maintain all the juices and aromas of salt cod’s most expensive cut.

Raspberry, yogurt and Dulcey junket Dulcey crumble, raspberry and yogurt junket, creamy yogurt, different Dulcey textures and raspberry meringue was my desert.

The desert was recommended to me by the propritetor, Mª Asun Ibarrondo, and I obliged

The desert was a harmony of tastes and textures and aromas, and by the time I finished it I could only think of how hard it would be to improve on such a finish to a wonderful meal.

 

 

 

Sea Urchin Egg Risotto: a dish by Lefteris Lazarou – Ριζότο με αυγά αχινού: ένα πιάτο του Λευτέρη Λαζάρου

Η καλή μαγειρική είναι εκείνη που στοχεύει σε κάτι που το ξέρει καλά  και το πετυχαίνει πάντα. Καλή μαγειρική είναι η κουζίνα της γιαγιάς, της μαμάς, της Λωξάντρας, και πάει λέγοντας. Οι αποτυχίες στην καλή μαγειρική είναι λίγες.

Good cooking aims always at something that is well known and it achieves it all the times. This is the cooking of the grandmother, mother, and so on. Failures in this cooking are rare and nobody remembers them.

Η υψηλή μαγειρική (haute cuisine) είναι πάνω απ’ όλα τα άλλα η επιδίωξη του τέλειου, με την επίγνωση ότι κάτι τέτοιο είναι ανέφικτο. Οι αποτυχίες στην υψηλή μαγειρική είναι ο κανόνας. Είναι μια μάνα που τρώει τα παιδιά της. Για τον λόγο αυτό κάθε πιάτο υψηλής μαγειρικής είναι και μια ευκαιρία να πανηγυρίσουμε να αποθεώσουμε τον μάγειρα, και να σπεύσουμε να γευθούμε κάτι που είναι εφήμερο αλλά και παντοτινό. Γιατί η μνήμη του δεν σβήνει.

Haute cuisine, on the other hand, is the pursuit of perfection, with the full knowledge that it is unattainable. Failures are the rule in haute cuisine, it is a mother that kills its children. It is for this reason that every successful dish of haute cuisine makes me jubilant and I prooceed to taste it both in its transience and its eternity. Because its memory never fades away.

Σήμερα παρουσιάζω ένα πιάτο υψηλής μαγειρικής, που έφτιαξε ο Λευτέρης Λαζάρου και είχα την τύχη να γευθώ στο «Βαρούλκο».

Today I present a haute cuisine dish prepared by Chef Lefteris Lazarou in his “Varoulko” restaurant near Piraeus.

Από την περιγραφή φαίνεται το απλούστερο των απλών. Ριζότο με αυγά αχινού. Τα φαινόμενα όμως απατούν. Όσο απλούστερο πιάτο, τόσο μικρότερα τα περιθώρια για να κρυφτεί ο μάγειρας πίσω από εξωτικά υλικά και σύγχρονες τεχνικές όπως οι αφροί που κατακλύζουν τόσα και τόσα πιάτα. Ο μινιμαλισμός είναι ο χειρότερος εχθρός της «δήθεν» υψηλής μαγειρικής.

If one looks at the description of the dish, she might be misled by its simplicity. However, the simpler the dish, the less room the chef has to hide, behind exotic ingredients and modern techniques, like covering the dish with foam. Minimalism is the arch enemy of the supposedly haute cuisine.

‘Ας δούμε τις δυσκολίες του πιάτου.

Καταρχάς το ριζότο από μόνο του είναι μια πρόκληση. Το να φτιάξεις ένα καλό ριζότο είναι δύσκολο. Κυρίως επειδή πρέπει να σεβαστείς το ρύζι και να μην προσθέσεις τόσες άλλες γεύσεις που εξαφανίζουν τη γεύση του ρυζιού, ξεκινώντας από το απλούστερο όλων, το αλάτι, και συνεχίζοντας με τον ζωμό θαλασσινών και λαχανικών μέσα στον οποίο γίνεται το ριζότο. Πρόσφατα γεύθηκα ένα ριζότο σε γνωστό εστιατόριο, που είχε καταφέρει να εξαφανίσει τη γεύση του ρυζιού, χρησιμοποιώντας ένα ζωμό δυναμίτη που αναισθητοποιούσε τον ουρανίσκο.

Let us identify the difficulties of the dish.

To start with, making a risotto is a challenge by  itself, because you must respect the rice and not make it disappear behind other tastes like salt, and the broth. I recently tasted a risotto in a Michelin starred restaurant of Athens, in which the broth was so strong that had exterminated the taste of the rice.

Προσθέτοντας τα αυγά αχινού, αυτό το έδεσμα εδεσμάτων, καθιστά το πιάτο σχεδόν αδύνατο. Μιλάμε για την μεταξένια υφή τους, που τόσο εύκολα καταστρέφεται, μιλάμε για τα αρώματα που τόσο γρήγορα χάνονται στις γειτονιές των πιο ισχυρών.

Adding the sea urchin eggs, this delight of delights, makes the dish almost impossible. How are you ging to respect its texture and the flavor that is so subtle?

Όλα αυτά δεν αποτελούν εμπόδιο για τον Λευτέρη Λαζάρου, που στο πιάτο αυτό μεγαλουργεί.   Οι ισορροπίες γεύσεων που πετυχαίνει είναι αξιοθαύμαστες. Τα καταφέρνει να συνυπάρχουν αρμονικά το ρύζι με τον αχινό, διατηρώντας το καθένα την προσωπικότητα του.

None of these difficulties tames Chef Lazarou, who comes out victorious. He manages to add the sea urchin eggs to the dish in such a way that they retain their velvety texture and flavor.

Ο σεβασμός στην πρώτη ύλη είναι εντυπωσιακός. Προσέξτε τα αυγά του αχινού. Είναι τόσο «ζωντανά» και ακέραια σα να βγήκανε από το κέλυφος μόλις τώρα. Καμία σχέση με  τα ταλαιπωρημένα και διαλυμένα συναφή που μοιάζουν με αποτυχημένη καροτόσουπα.

Το πιάτο είναι και χάρμα οφθαλμών. Το χρυσαφένιο ριζότο με την τερακότα του αχινού και τα φυλλαράκια άγριας ρόκας συνθέτουν μια «νεκρή φύση» αντάξια των μεγάλων καλλιτεχνών των ελληνιστικών χρόνων. Το φαντάζομαι σε ψηφιδωτό σε βίλλα του Ερκολάνο, δίπλα στην βιβλιοθήκη με τους παπύρους του Επίκουρου.

In addition to the taste, the dish is colorful and a delight of the eye. It could become a painting and decorate a villa near Ercolano.

Μια επίσκεψη στο «Βαρούλκο» αξίζει και μόνο για αυτό το πιάτο, που πανάξια ανήκει στην υψηλή Μεσογειακή κουζίνα.

Visit Varoulko to taste this dish, but call ahead, as it is not on the menu every day.

Taverna Strofi, Perama, Attica, Greece – Ταβέρνα Στροφή, Πέραμα, Αττική

Taverna Strofi is in Perama, a remote neighborhood of the port of Piraeus.  “Pera” in Greek means “far”. The name of the area literally means the “far away place”. I will let the photos describe the food. Service is good, and value for money above average.

Η Ταβέρνα Στροφή βρίσκεται στο Πέραμα, Αξίζει η μετάβαση, όπως θα δείτε και από τις φωτογραφίες. Καλή εξυπηρέτηση, και σχέση αξίας προς τιμή.

Home smoked pork shank – Σπιτικό Καπνιστό Χοιρινό Κότσι

Today’s post is about home smoking pork shanks. Smoking foods is not widespread in Greece, and until today I have not determined why. I was introduced to smoked meats during my travels in Europe and the Balkans, especially in Alsace, and I liked it a lot. As smoked meats are not available in Greece, I decided to start preparing them at home. I bought for this purpose a smoker/barbecue unit and decided to have a go.

Το σημερινό δημοσίευμα αφορά την παρασκευή καπνιστού χοιρινού στο σπίτι. Έχοντας ταξιδέψει στην Αλσατία και τα Βαλκάνια, βρήκα αρκετές ευκαιρίες να γευθώ και να εκτιμήσω τα καπνιστά κρέατα, με κορυφαίο το χοιρινό. Μία από τις ανεξήγητες – ακόμη – απουσίες από την Ελληνική κουζίνα είναι τα καπνιστά προϊόντα, και δη κρέατα, και δη χοιρινά, τα οποία είναι ελάχιστα. Αποφάσισα λοιπόν να πάρω την τύχη μου στα χέρια μου και να παρασκευάσω δικό μου χοιρινό καπνιστό, έχοντας μέχρι σήμερα κάνει κάποιες προσπάθειες ελαφρού καπνίσματος σε μπριτζόλες. Για το κάπνισμα προμηθεύτηκα μια απλή συσκευή που μπορεί να χρησιμοποιηθεί και για απλό ψήσιμο στα κάρβουνα, ή και μπάρμπεκιου. Για τη διαφορά κάρβουνα/μπάρμπεκιου θα γράψω άλλη φορά.

Smoked pork shank – detail (Καπνιστό χοιρινό κότσι – λεπτομέρεια)

The part of the pork I chose is the shank, because it is not a trivial cut, but also its size is reasonable and requires only a few hours of smoking. I bought the shanks from my favorite butcher, “Lambros”, in the village Steni of Euboia. There are two stages in the preparation. First you have to lightly cure the meat, and then smoke it. The recipe I used comes from the Ruhlman / Polcyn book.

Διάλεξα το κότσι για την πρώτη εφαρμογή της μεθόδου του καπνίσματος, επειδή μπορεί να γίνει το πιο νόστιμο και δεν χρειάζεται πολλές ώρες στην ετοιμασία του. Το κρεοπωλείο «Λάμπρος» στη Στενή Ευβοίας, όπως με προμήθευσε με εξαιρετικά κότσια χοιρινά, και έσπευσα να τα καπνίσω.
Η παρασκευή περιλαμβάνει δύο στάδια. Στο πρώτο στάδια το κότσι εμβαπτίζεται και παραμένει σε ήπιο διάλυμα μα αλάτι και ζάχαρη για τρεις ημέρες. Στο δεύτερο στάδιο το κότσι μπαίνει στο καπνιστήρι και σε πολύ χαμηλή φωτιά καπνίζεται για αρκετές ώρες, εν προκειμένω πέντε. Ακολούθησα την συνταγή που αναφέρεται στο βιβλίο:

Smoker – Καπνιστήρι

Water solution (for 2 shanks, approximately 4 kilograms)

5 lt. of water

400 grams coarse sea salt

50 grams of pink salt

250 grams of brown sugar

Pink salt is necessary to prevent botulism poisoning. Botulism toxins can be created during the low heat smoking  process.

Υδατικό διάλυμα (για 2 κότσια, 4 κιλά κρέας)
5 λίτρα νερό
400 γραμμάρια χοντρό αλάτι
50 γραμμάρια ροζ αλάτι
250 γραμμάρια σκούρα ζάχαρη
Το ροζ αλάτι είναι απαραίτητο για την αποτροπή δηλητηριάσεως τροφιμογενούς βοτουλισμού. Η δηλητηρίαση αυτή οφείλεται σε τοξίνες που μπορεί να αναπτυχθούν στο κρέας κατά τη διάρκεια του καπνίσματος σε χαμηλή θερμοκρασία.

Shank in a salt and sugar water solution – Εμβαπτισμένο κότσι

Stage 1: Cure the meat

Prepare the water based solution with all the ingredients and place in a big container so that the water covers the meat. Refrigerate for 3 days, turning the meat occasionally. After the three days, remove form the liquid solution, wash thoroughly and dry for 8 to 24 hours. The drier the meat surface, the better for the smoking process,

Στάδιο Πρώτο: Μαρινάρισμα
Εμβαπτίζουμε τα κότσια σε μια μεγάλη λεκάνη με το διάλυμα και το τοποθετούμε στο ψυγείο για τουλάχιστον 3 ημέρες. Μετά το τριήμερο απομακρύνουμε το κρέας από το διάλυμα, πλένουμε καλά και αφήνουμε να στεγνώσει καλά για 8 έως 24 ώρες. Το καλό στέγνωμα είναι απαραίτητο για το καλό κάπνισμα. Τα σωματίδια του καπνού «κολλάνε» πολύ καλύτερα επάνω σε μια στεγνή επιφάνεια, παρά σε μια υγρή.

Stage 2: Smoke the meat

Smoking the meat in 150 degrees Fahrenheit requires approximately 5 hours.

Στάδιο Δεύτερο: Κάπνισμα

Το κάπνισμα γίνεται σε χαμηλή φωτιά, και για πολλές ώρες. Στην συγκεκριμένη περίπτωση η θερμοκρασία ήταν περίπου 150 βαθμοί Φαρενάϊτ (65 βαθμοί Κελσίου) και το κάπνισμα διήρκεσε 5 ώρες.

During smoking, you need to renew the fire every hour or less frequently, and turn the meat so that smoke gets to all surfaces of it.

Στην διάρκεια του καπνίσματος απαιτείται ανανέωση της φωτιάς κάθε μια ώρα περίπου, αυτό όμως είναι θέμα του ψήστη. Επίσης πρέπει να γυρίζουν τα κότσια προκειμένου να καπνιστούν καλά όλες οι επιφάνειες.

Home smoked pork shank – Σπιτικό καπνιστό χοιρινό κότσι

After the smoking is over, I let the meat rest and cool down. I prefer, if I can, not to eat the smoked meat on the day I prepared it. I can store it in the fridge for a few weeks and eat as much as I like when I like. My favorite way of serving it is with sour cabbage and potatoes. The skin is delicious by itself of in soups.

Μετά την ολοκλήρωση του καπνίσματος, αφήνω τα κότσια να ηρεμήσουν και να κρυώσουν. Προτιμώ να μην τα αναλώσω την ίδια μέρα. Το καπνιστό κότσι διατηρείται στο ψυγείο για πολλές εβδομάδες.
Μπορεί να σερβιριστεί είτε μόνο του, είτε με συνοδεία.
Εγώ το προτιμώ με ξυνολάχανο και πατάτες.
Η πέτσα τρώγεται είτε από μόνη της, είτε χρησιμοποιείται σε σούπα, όπου και δίνει απίστευτα αρώματα.
Με δύο λόγια, το παραγόμενο αποτέλεσμα δίνει πολλές γαστρονομικές λύσεις και για μεγάλο διάστημα.

There are still some artisans producing delicious food. This salami is spicy and rich. The best antipasto for a cold day. I can see the traces of the influence of Venetian rule on the island of Corfu. Corfu has never been ruled by the Ottoman Turks.

I served two types, the juicy salty big ones, and the sweet wrinkled (hamades), the ones made from olives that have fallen on the ground and not picked.   Amfissa is a provincial city 10 km away from Delphi. The breathtaking valley of olive trees that you see from Delphi belongs to the area of Amfissa. That’s where the olives come from.

Rolled Cabbage with pork sausage cooked in duck fat

I had some sausages from the Basque country and used them as filling in the cabbage rolls. I served them with a light sauce of coriander and lemon juice.

The sausage and duck fat were produced by the artisan ANNE ROZES on France, Basque Country. The cabbage is locally produced in Marathon, and it is like silk. Very tender, sweet, the perfect companion to duck fat.

Tourte with Ewe

I roasted the ewe, cut it to small cubes and then marinated it in a mix of herbs and spices. The tradition of preparing a tourte with meat comes from the island of Crete, another place in Greece that has been ruled by the Venetian Republic.

Foies Gras de Canard (Anne Roze) – Boudin Noir (Christian Parra)

The protagonists of the post speak for themselves.

I will introduce them and pay my respects.

The rest belongs to the senses.

It all started with a bet, which I lost (unfortunately, the implications of this loss are much much more important).

Having lost the bet, I had to offer to the winner lunch.

Knowing fully well the horrible implications of the lost bet, not the lunch, but the real ones, I decided to make the lunch a festive occasion, that even for a split millisecond counterbalances the horrendous implications of the event that led to the loss of the bet.

My menu was simple.

We started with foies gras de canard, accompanied by caramelised pears.

The second dish was the divine boudin noir of  Christian Parra.

I wanted to accompany it with something light, but at the same time tasty.

The first obvious choice was mashed potatoes.

The second was my original recipe of lightly steamed beetroot, mixed with butter flavoured celery. It really worked!

Some apples with butter and honey added the finishing touch.

The boudin was enjoyed with a bottle of 2001 Patrimo di Feudi San Gregorio, an outstanding merlot!
