Η φιλόλογος που έγινε και μαγείρισσα

Η μητέρα μου ήτανε καθηγήτρια στο Γυμνάσιο (σήμερα θα ήτανε και στο Λύκειο). Μετά την αποφοίτηση της από το Καποδιστριακό Πανεπιστήμιο Αθηνών, στο τέλος της δεκαετίας του 1940, διορίστηκε ως φιλόλογος στην Δημόσια Εμπορική Σχολή Ρόδου. Το νησί είχε πρόσφατα ενσωματωθεί μαζί με τα άλλα Δωδεκάνησα στην Ελλάδα.

Εκεί γνώρισε τον πατέρα μου, Πολιτικό Μηχανικό, που είχε αποφοιτήσει από το Εθνικό Μετσόβιο Πολυτεχνείο και μετά από πολλά έτη στρατιωτικής θητείας είχε διοριστεί νομο-μηχανικός στη Δωδεκάνησο, με έδρα τη Ρόδο.

Όταν το ζεύγος παντρεύτηκε το 1951, σύμφωνα με αφήγηση της μητέρας μου, δεν ήξερε να βράσει ούτε ένα αυγό, κάτι το οποίο ίσχυε και για τον πατέρα μου. Για λόγους πληρότητας της αφήγησης, σημειώνω ότι ο πατέρας μου ήτανε μάστορας σουβλιστής και ψήστης αμνοεριφίων σε ξυλοκάρβουνα. Σε αυτόν χρωστάω τα όσα ξέρω σήμερα στον τομέα αυτό.

Στην οικογενειακή εικόνα προστέθηκε και η μητέρα του πατέρα μου, η γιαγιά Αγγελική, που εγκαταστάθηκε και αυτή στη Ρόδο και για ένα διάστημα αναπλήρωσε το μαγειρικό κενό της φιλολόγου μητρός μου. Χωρίς αμφιβολία, η παρουσία της γιαγιάς αύξησε την πίεση στην μητέρα μου, να ανταποκριθεί στα μαγειρικά της καθήκοντα.

Έτσι η φιλόλογος μητέρα αποφάσισε να βάλει στη ζωή της και τη μαγειρική. Ποια μαγειρική όμως; Η γιαγιά Αγγελική εκπροσωπούσε την ελληνική ποιμενική παραδοσιακή μαγειρική, εμπλουτισμένη με στοιχεία από την Μικρά Ασία. Υπήρχε όμως και εναλλακτική.

Κάθε φορά που κάνουμε μια “Στροφή” στη ζωή, κουβαλάμε μαζί μας το παρελθόν. Εν προκειμένω η μητέρα φιλόλογος παρόλον ότι δεν ήξερε να μαγειρεύει είχε πλουσιότατο μαγειρικό παρελθόν από το πατρικό της σπίτι.

Ο πατέρας της μητέρας μου ήτανε εύπορος μέχρι το κραχ του 1929. Στο σπίτι του απασχολούσε μαγείρισσα, που μαγείρευε ήπιες εκδοχές της Γαλλικής κουζίνας. ‘Έτσι η μητέρα μου τα είχε όλα έτοιμα στην κουζίνα και δεν έκανε απολύτως τίποτε. Η μητέρα της, γιαγιά Αντωνία, ουδέποτε ασχολήθηκε με την κουζίνα, οπότε δεν υπήρχε μέσα στο σπίτι κάποιος να προσανατολίσει την μητέρα μου προς την μαγειρική.

Σαν παιδί και έφηβη, η υποψήφια μαγείρισσα μητέρα μου έτρωγε αυτά που αρέσουν στα παιδιά, όπως πατάτες τηγανητές και γλυκά, δεν έτρωγε λαχανικά, και θα μπορούσε να την χαρακτηρίσει κανείς κακομαθημένη. Όταν μάλιστα ο πατέρας της την πίεζε να δοκιμάσει κάτι, όπως αγκινάρες, η μητέρα μου έτρεχε και κρυβότανε κάτω από το κρεββάτι της, περιμένοντας την γιαγιά της, που την λάτρευε, να έρθει και να την “πείσει” να επιστρέψει στο τραπέζι.

Στην αρχή η μητέρα μου πήρε μαθήματα από την γιαγιά Αγγελική, και άρχισε να μετέχει στην διαδικασία, βλέποντας τη γιαγιά και κάνοντας. Σημειώνω ότι αυτή η διαδικασία ελάμβανε χώρα παράλληλα με την πλήρη απασχόληση της στο σχολείο όπου δίδασκε, και την άσκηση οικογενειακών καθηκόντων, που σταδιακά περιέλαβαν και την φροντίδα και ανατροφή της αδερφής μου και εμένα, όπως και την φροντίδα των δύο γονέων της, της Αντωνίας και του Σπυρίδωνα, που εγκαταστάθηκαν και αυτοί στη Ρόδο.

Η μαγειρική της μητέρας μου ήταν ιδιαίτερη, είχε κάτι το μοναδικό, είχε χαρακτήρα, είχε προσωπικότητα. Η μαμά δεν αντέγραφε ένα πιάτο, δημιουργούσε τη δική της εκδοχή για αυτό. Στις αγκινάρες αλά πολίτα αυγολέμονο είχε βρει την τέλεια ισορροπία ανάμεσα στο όξινο του λεμονιού και το ημίγλυκο της σάρκας της αγκινάρας, που απογείωνε το πιάτο σε κάτι εξαιρετικό. Στα λαδερά είχε επιλέξει να περιορίσει την ποσότητα του ελαιόλαδου, για να αναδείξει περισσότερο την γεύση της πρώτης ύλης, χωρίς να χάνει το πιάτο συνολικά σε γεύση και απόλαυση. Ακόμα και ο πατέρας μου, που ήτανε προσκολλημένος σε κάποια χαρακτηριστικά, όπως το πολύ λάδι στα λαδερά, σταδιακά προσχώρησε στην εκδοχή της μητέρας μου, απλά επειδή ήτανε πιο γευστική. Η κότα μιλανέζα ήτανε το πιάτο στο οποίο εκδήλωνε στο έπακρο την απόλυτη προσήλωση της στην επίτευξη γευστικής αρμονίας. Μου ήτανε αδύνατο να πιστέψω ότι ένα κοτόπουλο θα έφτιαχνε ένα τόσο γευστικό πιάτο. Νομίζω ότι το μυστικό της ήτανε στη μπεσαμέλ. Έφτιαχνε την γευστικότερη μπεσαμέλ του κόσμου. Κατά κάποιον τρόπο, η μητέρα μου είχε αναπτύξει την ικανότητα να φτιάχνει γευστικότατες σάλτσες, όπως μπεσαμέλ, αυγολέμονο, στιφάδο, και κρέμες όπως μαγιονέζα, ταραμοσαλάτα.

Το πνεύμα της “ιδιαίτερης” εκδοχής όμως είχε σαφή όρια, που ξεκινούσαν από την “ουσία” του πιάτου. Η μητέρα μου δεν μαγείρεψε ποτέ αυτή τη μάζα με πάστα, κρέμα γάλακτος, εκατό τυριά και ένα κιλό μπέικον που στην ελληνική κουζίνα παλαιότερων δεκαετιών αναφερόταν ως “σουφλέ”.

Η μαγειρική της είναι ότι κάλυπτε μεγάλη γκάμα από συστατικά, γλυκά και αλμυρά. Το πρώτο υλικό που έρχεται στη μνήμη είναι τα μοσχαρίσια μυαλά, που τα μαγείρευε και βραστά, και τηγανητά, όπως και μοσχαρίσια γλώσσα, και βραστή αλλά και – πρωτίστως – στιφάδο. Το άλλο είναι ο μοσχαρίσιος πατσάς. Στη δεύτερη ζωή της ή την τρίτη, η μητέρα μου θα πρέπει να ήτανε πατσατζής. Είχε βέβαια και καλό πελάτη, τον πατέρα μου, που μπορούσε να φάει τέσσερα και πέντε πιάτα στην καθισιά του. Απλά λάτρευε τον πατσά αυγολέμονο. Και η φιλόλογος έμαθε να τον μαγειρεύει υπέροχα.

Εκτός από τον πατέρα μου, η μαγείρισσα είχε και άλλους αφοσιωμένους πελάτες. Τα γλυκά του κουταλιού που ετοίμαζε κάθε χρόνο με πρωταγωνιστή το νεραντζάκι εξαντλούνταν σε χρόνο ρεκόρ. Ο υπεύθυνος για αυτό ήταν ο αδερφός της, ο θείος Γιάννης Μαυρογένης, που κάθε φορά που ερχότανε στο σπίτι πήγαινε πρώτα στον μπουφέ με τα βάζα με τα νεράντζια, καταβρόχθιζε άγνωστο αριθμό, αναστέναζε σα να είχε γεννήσει, και μετά ερχόντανε να μας μιλήσει και να μας δεί. Μια φορά ήτανε τόσο ανυπόμονος να γευθεί τα “χαπάκια” του όπως τα έλεγε, που του έπεσε το βάζο κι έγινε κομμάτια και θρύψαλα. Ψύχραιμος ο θείος Γιάννης, μάζεψε τα γυαλιά από το πάτωμα, και άρχισε να τρώει τα χαπάκια του που παρέμεναν στο σιροπιασμένο πάτωμα, σα να μην είχε συμβεί τίποτε.

Τα γλυκά του κουταλιού αποτέλεσαν και την πρώτη και μοναδική αφορμή για ξυλοφόρτωμα από τον πατέρα μου, σε ηλικία 3 ετών. Είχαμε εντοπίσει με την αδερφή μου το ράφι του μπουφέ στο οποίο φύλαγε η μητέρα μας τα γλυκά, αλλά είμασταν πολύ κοντοί για να έχουμε πρόσβαση σε αυτά. Έτσι, ανεβήκαμε στη σκάλα και κοντέψαμε να σκοτωθούμε. Ο πατέρας μου άκουσε τη φασαρία, μπήκε στην τραπεζαρία και μας βρήκε στο πάτωμα με τη σκάλα από πάνω μας, οπότε έπεσε το λεγόμενο ξύλο της αρκούδας.

Ακόμα και οι καλύτεροι όμως βρίσκουνε αργά ή γρήγορα τα όρια τους. Ένα βράδι, χτυπάει το κουδούνι και ακούγεται η φωνή του ψαρά μας, του Μιαούλη: “Μοροπούλαινα, σου έφερα ένα ψάρι”.

Κατεβαίνει τις σκάλες η Μοροπούλαινα και βρίσκει σε μια λινάτσα ένα ροφό εξάκιλο που σπαρταρούσε ακόμη. Εκεί παρέδωσε τα όπλα και ανέθεσε την μεταφορά του ψαριού στον πατέρα μου.

Την άλλη μέρα ο ροφός έγινε βραστός.

Η σχέση με τους προμηθευτές και η καθημερινή βόλτα στην αγορά πρωί πρωί, πριν πάει στο σχολείο, ήτανε ιδιαίτερα σημαντικό μέρος της καθημερινής ρουτίνας της μητέρας μου, το οποίο απολάμβανε. Αντίστοιχες “βόλτες” έκανε και ο πατέρας μου, και έτσι είχανε καταλήξει σε κάποιον καταμερισμό μεταξύ τους. Όλα τα μαναβικά και τα φρούτα τα αγόραζε η μαμά, κρέας ο μπαμπάς (από τον Μαντά), μπακάλικο και οι δύο, ενώ τα ψαρικά μας τα έφερνε ο Μιαούλης στο σπίτι. Μερικές φορές πήγαινα κι εγώ στην Αγορά της Ρόδου με τη μαμά, και μου άρεσε γιατί όλοι μου δίνανε κάτι να δοκιμάσω. Άλλο που δεν ήθελα. Στην αγορά της Ρόδου, θυμάμαι τον Γιώργο τον μανάβη, με κατσαρά μαύρα μαλλιά και υγρά μαύρα μάτια. Κάθε φορά που πήγαινα με την μητέρα μου για ψώνια, ο Γιώργος έπινε από ένα σωληνάτο ποτήρι ένα άσπρο υγρό. Κάποια μέρα τον ρώτησα “είναι καλό το γάλα σας κύριε Γιώργο;” “Μόνο καλό;” μου απάντησε, “το καλύτερο! Σε κάνει να βλέπεις τον κόσμο καλύτερο!”

Η μαγείρισσα μητέρα μου είχε και την ικανότητα να αυτοσχεδιάζει και να ετοιμάζει ποιοτικό φαγητό στο πιτς φυτίλι. Ένα καλοκαίρι στην Πάτμο, στο εστιατόριο που είχε ο θείος Γιάννης με τον συνεταίρο και φίλο του, Άγγελο Βρεττό, κατά τις 6 το απόγευμα, έρχεται μια παρέα 10 ατόμων, Γάλλοι, με μια σακούλα γεμάτη αστακούς. Ο μάγειρας έλειπε, στο εστιατόριο ήτανε μόνο η μητέρα μου, η γυναίκα του Άγγελου Κική και ένας σερβιτόρος. Οι Γάλλοι ήθελαν να φάνε τους αστακούς, και είπανε στη μαμά να τους μαγειρέψει όπως θέλει. Εκείνη δεν τους είπε ότι είναι και αυτή πελάτισσα, αλλά δέχτηκε, και είπε στο σερβιτόρο να περιποιηθεί τους πελάτες όσο εκείνη ετοίμαζε το γεύμα.

Έβρασε τους αστακούς και αφού αφαίρεσε την ουρά και τις δαγκάνες, έφτιαξε με τις εναπομείνασες ουσίες ένα γευστικό ζωμό και στη συνέχεια ριζότο. Οι Γάλλοι ενθουσιάστηκαν, και είπαν ότι ήτανε από τα καλύτερα πιάτα που είχανε γευθεί ποτέ.

Ακόμη και σήμερα, ανατρέχοντας σε βιβλία της, βρίσκω μέσα χειρόγραφες συνταγές με σημειώσεις. Σα να είναι στην κουζίνα δίπλα, και να ετοιμάζει το Χριστουγεννιάτικο τραπέζι.

Bristol upon Avon, UK

Early Saturday morning departure from London’s Paddington; destination: Bristol upon Avon.

Objective: walk around, have lunch with my cousin John, who at the time was a visiting Professor at the University of Bristol, and then return to London.

Going West. Just passed Swindon. One hour to go.

The train was fast. A group of youngsters in their early 20s next to me were talking about their experience doing voluntary work in Somalia. Some were thinking of going back. I liked that. It gives life a different perspective.

As the route map shows, we went by Swindon. I got to know Swindon in the early 1990s, when I was working in England, and had associated it woth the Honda car factory. This factory is now due to close on 2021. Times change.

I did not know it, but I heard about it when I got there.

Bristol upon Avon in the UK, was a prominent port in the transatlantic slave trade in the 17th and 18th centuries. More than half a million enslaved Africans were traded by Bristol merchants.

It almost sounds like a story that never happended. But it did. The world has changed a lot since then. Overall, I think that it has changed for the better. I know that this is a “feel good” type of statement, but so be it. Survival is in addition to all else an emotional struggle.

This is a short report on a short visit that took place on the 16 November 2013. All photographs were taken by me, unless stated otherwise.

Walking from the rail station to the old center of the city, there is a bridge. This row of houses provides the background to the view on the left. I like the subtlety of the colours, tone. It matches the greyness of the sky, and somehow it betrays the existence of a muted exhuberance to be expressed some time in the future.

Bristol was also active in corn trading.

The “Exchange” is a historic building that was previously used as a corn and general trade exchange. Today it houses offices and the administration of St. Nicholas’ market.

The clock was first installed in 1822. A second minute hand was later added to show the time in London as well as the local time in Bristol;the red minute hand shows Bristol time and the pink minute hand shows Greenwich Mean Time . This became necessary following the arrival of the railways, which required a standardised time for timetabling around the country, known as railway time; Bristol officially adopted railway time on 14 September 1852. The city is 2º 35′ west of Greenwich, so when it is noon in Bristol by old local time, it is just after 12:10 p.m. in London by standard time.

The whole area of the Exchange in the old city has been transformed into a big market area with shops and stalls.

John is the pieminister in the photo. The shop is still there, in St. Nicholas’ market, just checked it on Google maps. In reality, John is an Associate Professor who teaches geology at the Australian National University in Canberra. He specialises in the geochemistry of economic minerals.

The Bristol Sausage Shop was there in 2013, but it is no longer. The product is a commodity that can be found everywhere in England. Given that a sausage is easy to make and store and costs very little, the margins are very low. I am not surprosed that the nice shop no longer is.

Bristol is a port city. It could not afford not to have a statue of Neptune. It could have been a bit bigger. Also, I think that there is a sensitivity around it, something soft and vulnerable, which does not fit with the image of the God who rules the Seas. May be the sculptor caught Neptune off guard.

Every major city in the UK seems to have its Hippodrome. Which literally means Horse Racing Track.

The most famous Hippodrome I know of existed in Constantinople, the Capital of the Eastern Roman Empire (later known as Byzantium). It was the place where people would go to have fun and forget the miseries of life. On occasions, they would also fight each other.

There were two major teams, the Blues and the Greens. Their rivalry often became mingled with political or religious rivalries, and sometimes riots, which amounted to civil wars that broke out in the city between them. The most severe of these was the Nika riots of 532, in which an estimated 30,000 people were killed and many important buildings were destroyed, such as the nearby second Hagia Sophia, the Byzantine cathedral. The current (third) Hagia Sophia was built by Justinian following the Nika riots.

Today it is a square named Sultanahmet Meydanı (Sultan Ahmet Square) in the Turkish city of Istanbul, with a few fragments of the original structure surviving.

Going around town, I run into a lady selling handmade soap and other toiletries. I bought some soap and face cream, and still have the tin box with me.

Banksy is an anonymous graffiti artist based in Bristol. The blue and beige blobs are the result of vandalism. Since 2013 the painting has been attacked again.

Following our short walk around town it was time for lunch. You can read all about it (and a little more) in the article I wrote back in 2013.

Unfortunately the restaurant is no longer in business. They closed down in the Spring of 2020 when the first UK lockdown was put in effect, and the proprietors decided not to reopen.

On the way back to London I caught a “special” train that was returning from Cardiff, where they were playing a tournament Rugby. In the carriage there were a lot of passengers with flags of Argentina. They were all asleep.

“Φάε ρε σπασο-παΐδη!”

Η λέξη αυτή είναι σύνθετη.

Το πρώτο της μέρος προέρχεται από το “σπάζω”.

Είναι παραφθορά, αναφέρεται μάλλον σε κάτι σπασμένο.

Το δεύτερο της μέρος προέρχεται από τα παΐδια, τα πλευρά του σώματος.

Η λέξη αναφέρεται σε κάποιον άνθρωπο που είναι τόσο αδύνατος, που είναι εύκολο να του σπάσεις τα πλευρά, ή που τα πλευρά του είναι τόσο εκτεθειμένα που σπάζουν εύκολα.

Την λέξη την έμαθα από τον πατέρα μου, και δεν την έχω ακούσει από κάποιον άλλο. Μάλλον ήτανε δικής του εμπνέυσεως και κατασκευής.

Την χρησιμοποιούσε για να χαρακτηρίσει τον ΧΧ, γιο μιας φίλης οικογένειας, που ήταν πολύ αδύνατος. Ο ΧΧ την εποχή εκείνη ήτανε ούτε 10 ετών.

Ο ΧΧ ερχότανε συχνά στο σπίτι μας, και η μεγάλη επιχείρηση του πατέρα μου ήτανε να τον κρατήσει για φαγητό το μεσημέρι, ή το βράδυ, ανάλογα με την περίσταση, και να τον ταΐσει.

Η διαδικασία ήτανε απλή.

Κάθιζε τον ΧΧ στο τραπέζι δίπλα του, και του γέμιζε συνέχεια το πιάτο, κραυγάζοντας και γελώντας ταυτόχρονα: “Φάε ρε σπασο-παΐδη!”

Ο ΧΧ στην αρχή φοβήθηκε, δεν είχε αντιμετωπίσει κάτι παρόμοιο στον πρότερο βίο του. Η οικογένεια του ήτανε αστική, με την πραγματική έννοια του όρου, και στο τραπέζι δεν είχανε τέτοια συμβάντα.

Στη συνέχεια όμως, ο ΧΧ εξοικειώθηκε με την τελετουργία, και κατάλαβε ότι οι κραυγές του πατέρα μου ήτανε περισσότερο έκφραση αγάπης και παραίνεσης να φάει λιγάκι για να δυναμώσει, παρά κάτι άλλο.

Η τραπεζαρία μας ήτανε δίπλα στην κουζίνα, διασυνδεόταν με αυτήν με ένα πέρασμα σαν το “πάσο” των εστιατορίων, οπότε ήτανε πολύ εύκολο να έχομε αδιάλειπτη τροφοδοσία για να φάει ο ΧΧ. Η δε μητέρα μου, μαθημένη καλά από τις ιδιορρυθμίες του πατέρα μου, φρόντιζε να υπάρχει πάντα επαρκής ποσότητα και ποικιλία στα οικογενειακά τραπέζια.

Ο “κύριος Γιάννος” λοιπόν έγινε φίλος του ΧΧ και οι συνεστιάσεις έγιναν συχνότερες. Θυμάμαι χαρακτηριστικά μια περίοδο που η οικογένεια του ΧΧ είχε ένα οικογενειακό θέμα που απαιτούσε την συχνή απουσία της μητέρας του ΧΧ, οπότε ο ΧΧ ερχότανε στο σπίτι μας, και “έπεφτε” στην αγκαλιά του “κυρίου Γιάννου”, που άλλο δεν ήθελε για να φτιάξει η διάθεση του.

Η σίτιση του ΧΧ είχε πλέον γίνει απαραίτητη για την οικογενειακή μας ευρυθμία.

Το σκηνικό επαναλαμβανόταν και σε εξόδους σε εστιατόρια και ταβέρνες, ίσως με ηπιώτερο τελετουργικό, χωρίς ποτέ όμως να λείπει η φράση κλειδί.

“Φάε ρε σπασο-παΐδη!”

Τελικά όλες οι προσπάθειες του “κυρίου Γιάννου” πήγανε σε καλή μεριά, ο ΧΧ έγινε άντρας δύο μέτρα μπόι. Κι εγώ με την θύμηση του, κάθισα και έγραψα αυτό.

In memory of my Father – Πατρικές Αναμνήσεις

Ο Πατέρας μου απέθανε την 22α Απριλίου 1977. Χαράματα ήρθε η μητέρα μου στο διαμέρισμα μου, που ήτανε ακριβώς επάνω από την γονική εστία και μου είπε ότι ο μπαμπάς δεν ήτανε καλά. Κατέβηκα αμέσως και μόλις τον πρόλαβα να ψιθυρίζει “πεθαίνω…”.

Έχουν περάσει 43 χρόνια. Πάνω από μισή ζωή. Στο βάθος της μνήμης παραμένουν και ξεπροβάλλουν στιγμές ξεχωριστές.

Την παραμονή της εορτής του Αρχαγγέλου Μιχαήλ, που εόρταζε ο Πανορμίτης στη Σύμη,  μόλις βράδιαζε, όλη οι οικογένεια, που τότε ζούσαμε στη Ρόδο, ανεβαίναμε τη σκάλα του ΕΓ/ΟΓ (επιβατηγό – οχηματαγωγό) “Αικατερίνη”, της ακτοπλοΐας Καβουνίδη, για το σύντομο ταξίδι στον Πανορμίτη.

Είχα τη δική μου άσπρη βαλίτσα από χοιρόδερμα την οποία ετοίμαζα τουλάχιστον 10 μέρες πριν και κουβαλούσα εγώ, δεν άφηνα κανέναν να την αγγίξει. Μόλις μπαίναμε στη ρεσεψιόν του πλοίου, ο μπαμπάς πλησίαζε τον αρχικαμαρώτο και τον αγκάλιαζε, ήτανε φίλοι από τα πολλά ταξίδια που έκανε με τα καράβια, επειδή δεν έμπαινε ποτέ σε αεροπλάνο. Ο αρχικαμαρώτος με πλατύ χαμόγελο έπαιρνε κάτι κλειδιά και μας οδηγούσε σε μια τεράστια καμπίνα με ξύλινες επενδύσεις, που ήτανε ολόφωτη.

Το πρόγραμμα ήτανε πολύ απλό, αλλά υπέροχο. Το ίδιο βράδυ φτάναμε στον Πανορμίτη της Σύμης, διανυκτερεύαμε εκεί, μέσα στο πλοίο, την άλλη μέρα  προσκυνούσαμε στην εκκλησία της μονής, και μετά το πανηγυρικό γεύμα  επιστρέφαμε με το πλοίο στη Ρόδο.

Στη μνήμη το ταξίδι ήτανε σα να κρατούσε μια βδομάδα.

Το Ξενοδοχείο “Ξενία” στην πόλη της Κω

Μια άλλη ανάμνηση ευδαιμονίας ήτανε οι οικογενειακές διακοπές στο νησί της Κω. Πηγαίναμε το καλοκαίρι και μέναμε ένα μήνα στο ξενοδοχείο “Ξενία”.

Καθώς πλησίαζε η ημέρα της αναχώρησης, πήγαινα στην παραλία του ξενοδοχείου των ‘Ρόδων” και χάζευα τα πλοία που φεύγανε, και φανταζόμουνα ότι ήμουνα κι εγώ ένας επιβάτης.

Για μένα ήτανε ο Παράδεισος, αφού το δωμάτιο ήτανε πάνω στη θάλασσα, και είχα το ποδήλατο μου να πηγαίνω όπου θέλω. Κάναμε και πολύ παρέα με τα παιδιά της οικογένειας του πολιτικού μηχανικού και φίλου του πατέρα μου Γιάννη Μπαλαλή.

Εκείνη την εποχή (τέλη της δεκαετίας του 1960) δεν υπήρχε ο μαζικός τουρισμός που χαρακτηρίζει την Κω σήμερα, και ήτανε απλά υπέροχα! Ξαναπήγα στο νησί το 1988 και δεν μπορώ να πω ότι μου άρεσε.

Ένα καλοκαίρι ο μπαμπάς είχε οικονομικά προβλήματα κι έτσι δεν πήγαμε στην Κώ. Δεν μας το είπε όμως εξ αρχής, το άφησε να πηγαίνει από εβδομάδα σε εβδομάδα. Ποτέ δεν θα ξεχάσω αυτόν τον αργό θάνατο του ονείρου των διακοπών.

Κάθε Καθαρή Δευτέρα, η οικογένεια πήγαινε μια μεγάλη εκδρομή. Η μητέρα οδηγούσε την Alfa Romeo Giulia 1963, ο μπαμπάς συνοδηγός, η Τώνια κι εγώ στο πίσω κάθισμα. Συνήθως πηγαίναμε στο ημιορεινό χωριό Έμπωνας Ρόδου, και μετά κατηφορίζαμε στη θάλασσα, στα παράλια της Αρχαίας Καμείρου, όπου στην λεγόμενη Σκάλα δένουν τα πλοιάρια που πηγαίνουν στη νήσο Χάλκη.

Εκεί στην Σκάλα δίπλα στην προκυμαία ήτανε ένα δύο καφενεία, που φέρνανε μουσικούς και γινότανε ένα γλέντι τρικούβερτο με τους κατοίκους των κοντινών χωριών.  Η αδελφή μου χόρευε πολύ όμορφα τους τοπικούς χορούς και του έδινε να καταλάβει. Δεν άφηνε χορό για χορό. Κι ο πατέρας μου σκόρπιζε τα χιλιάρικα στα πόδια της κόρης του και στα μέτωπα των μουσικών της ορχήστρας. Δεν θα ξεχάσω ποτέ αυτή τη σκηνή. Ήτανε η εικόνα της ευδαιμονίας, της δικαίωσης, της εκπλήρωσης των προσδοκιών.

Όσοι αντέχανε μετά το γλέντι, ή και για διάλειμμα, παίρνανε το καραβάκι και πηγαίνανε απέναντι στη Χάλκη.

Τα καλοκαίρια των πρώτων τάξεων του Γυμνασίου – τότε δεν υπήρχε Λύκειο, πήγαινα σε εξατάξιο Γυμνάσιο – βοηθούσα τον πατέρα μου στο γραφείο του, ως σχεδιαστής. Κατόψεις και τομές με πλήρεις διαστάσεις και οπλισμούς. Από καιρού εις καιρόν, με έπαιρνε και στο εργοτάξιο να μαθαίνω, με είχε από τότε προορισμένο να γίνω πολιτικός μηχανικός. Το Σάββατο το μεσημέρι πλήρωνε το συνεργείο, μίσθωνε ταξί (το εργοτάξιο ήτανε εκτός πόλεως) και πηγαίναμε όλοι μαζί στην Ταβέρνα του Μπαμπούλα στην συνοικία Κόβα της πόλης της Ρόδου. Φτάναμε εκεί νωρίς το απόγευμα, 4 ή 5, και τρώγαμε τα πιο φρέσκα ψάρια που θα μπορούσε κανείς να ζητήσει.

Με το που έπεφτε ο ήλιος και  με το κεφάλι βαρύ από τον κάματο της ημέρας και το υπέροχο γεύμα, αρχίζανε τα όργανα. Ο Μπαμπούλας ήτανε ταβέρνα την ημέρα και μπουζουκομάγαζο το βράδυ. Ο δε πατέρας μου ήτανε από τους μεγάλους χορηγούς του Ιδρύματος.

Ένα βράδυ στον Μπαμπούλα. Ο πατέρας μου κάθεται αριστερά. Δεξιά είναι μια από τις τραγουδίστριες, με έναν κουμπάρο του μπαμπά. Η μητέρα μου κάθεται δεξιά, ίσα που διακρίνεται.

Ο Μπαμπούλας ήτανε αυθαίρετο κτίσμα και κάποια στιγμή έπεσε ο πέλεκυς του νόμου και το κατεδάφισε.  Το πλήγμα για τον πατέρα τεράστιο, τίποτε δεν μπόρεσε να γεμίσει το κενό που άφησε η παράγκα του Μπαμπούλα που πάνω σε ξύλινους πασσάλους χάριζε απολαύσεις στους θαμώνες της.

Λίγα χρόνια μετά η Ρόδος απόκτησε το πλωτό της εστιατόριο, το “Κοντίκι”. Ήτανε αγκυροβολημένο στο Μανδράκι, δίπλα στου μύλους. Η μοναδική αίσθηση του περιβάλλοντος και υψηλή ποιότητα, είχανε κάνει το Κοντίκι ένα από τα αγαπημένα  εστιατόρια του πατέρα. Αξέχαστο θα μου μείνει το Εσκαλοπ Χόφμαν. Όπως και η βραδιά που στο διπλανό τραπέζι δειπνούσε ο Αμερικανός ηθοποιός Charlton Heston.

Καθώς τα γράφω όλα αυτά, είναι σα να συνέβησαν εχθές. Σαν να είναι ο μπαμπάς στο διπλανό δωμάτιο και να απολαμβάνει τη μεσημεριανή του ξεκούραση.Και η μαμά λέει στην Τώνια κι εμένα να κάνουμε ησυχία γιατί ο μπαμπάς ξεκουράζεται.

 

 

 

 

Unexpected Memorial for Aunt Maria – Αναπάντεχο Μνημόσυνο για τη Θεία Μαρία

Η θεία μου η Μαρία αναχώρησε από αυτόν τον κόσμο το 2008. Ήταν ένα  συννεφιασμένο πρωινό, κι εγώ βρισκόμουνα στη Σερβία, όταν αντήχησε το κινητό μου τηλέφωνο.

Ο Κώστας, γιος της θείας Μαρίας ήτανε στην άλλη άκρη.

“Την χάσαμε την Μαρία” μου είπε.

Η Μαρία ήτανε η μεγαλύτερη από τις τρεις αδελφές του πατέρα μου, και η πιο αγαπημένη μου. Την είχα ξεχωρίσει επειδή ήτανε πάντα με το χαμόγελο, και είχε ιδιαίτερα υψηλή ευφυΐα. Επίσης αγαπούσε και θαύμαζε τον πατέρα μου με ένα τρόπο που με είχε οδηγήσει στο να αναγνωρίσω αρετές και προτερήματα του, που αλλιώς χανόντουσαν πίσω από το πολύ αυστηρό προσωπείο του.

Μεγάλωσε στην Ιστιαία Ευβοίας, όπου και γνώρισε τον σύζυγο της, τον θείο Σπύρο.

Παντρεύτηκαν και έκαναν οικογένεια στην Ιστιαία.

Εκτός από υπέροχος άνθρωπος, η Μαρία ήτανε και εξαιρετική μαγείρισσα.  Σε κάθε επίσκεψη μου στην Ιστιαία είχα την ευκαιρία να απολαύσω ένα εξαίσιο γεύμα.

Το σήμα κατατεθέν για το τραπέζι της Μαρίας ήτανε ένα σκληρό πρόβειο τυρί από το κοντινό χωριό της Κοκκινομηλιάς. Μοσχοβολούσε γάλα και είχε μια απίστευτη  γευστική ένταση, που την απογείωνε το αλάτι. Και σκέτο, αλλά και για την γέμιση της θεϊκής τυρόπιτας που έφτιαχνε, αυτό το τυρί το είχα συνδέσει με τη θεία Μαρία, την ευγένεια, την αγάπη, την ευστροφία της.

Η θεία Μαρία ως ευφυής άνθρωπος είχε καταλάβει πόσο μου άρεσε το τυρί, κι έτσι κάθε φορά μου έφερνε και ένα συμπλήρωμα στο πιάτο “για να τελειώσω το κρασί μου”.

Η γευστική μνήμη του τυριού από την Κοκκινομηλιά παρέμεινε ανεξίτηλη στο μυαλό μου και  τον ουρανίσκο μου, και σήμερα αναβίωσε.

Ο τοπικός φούρναρης είναι από τα Τρίκαλα και από καιρού εις καιρόν έχει τυρί από τα πάτρια εδάφη του. Ρώτησα λοιπόν σήμερα αν έχει τυρί. Μετά από πολύ ενδοιασμό και μισόλογα, μου έφερε να δοκιμάσω ένα κομματάκι.

“Είναι εξαιρετικό, απλά του ξέφυγε λίγο το αλάτι”  μου είπε. Δοκιμάζω και βλέπω μπροστά μου την θεία Μαρία. Το τυράκι του φούρναρη από τα Τρίκαλα ήτανε  ολόιδιο με το τυράκι της Κοκκινομηλιάς.

Συγκρατήθηκα για να μην εκφράσω τον ενθουσιασμό μου. “Καλό είναι, θα το πάρω” αποκρίθηκα.

Καθώς γράφω αυτό το σημείωμα, έχω ένα πιατάκι με το τυράκι δίπλα και μασουλάω, πίνοντας ουζάκι. Σαν να κουβεντιάζω όπως παλιά με την θεία Μαρία.

 

 

 

 

 

In memoriam John Moropoulos – Στην μνήμη του Ιωάννη Μορόπουλου

Σήμερα είναι η μεγάλη γιορτή του Ιωάννη του Προδρόμου και τιμώ την μνήμη του πατέρα μου, Ιωάννη Μορόπουλου. Γεννήθηκε στην Ιστιαία Ευβοίας, γιος του Νικόλαου και της Αγγελικής, και σπούδασε Πολιτικός Μηχανικός στο Ε.Μ.Π. Αποφοίτησε το 1949 μετά την πολυετή στρατιωτική του θητεία και διορίστηκε μηχανικός στη νεοσύστατη Νομαρχία Δωδεκανήσου, με έδρα τη Ρόδο, την οποία αγάπησε σα δεύτερη πατρίδα του. Εκεί γνώρισε την μητέρα μου, που είχε διορισθεί φιλόλογος στην Εμπορική Σχολή, την οποίαν ηράσθη σφόδρα. Παντρεύτηκαν το 1951 και απέκτησαν δύο παιδιά.

Ο προϊστάμενος του πατέρα μου το 1949 στη Ρόδο ήταν ο Νικήτας Αβραμέας, Πολιτικός Μηχανικός, παντρεμένος με τη Ζωή Αβραμέα, που πριν τον πόλεμο ήταν νοσηλεύτρια στην Βασιλική Αυλή. Οι γονείς μου – ο καθένας χωριστά – γνωρίστηκαν με το ζεύγος Αβραμέα στην μικρή κοινωνία όσων είχαν πάει στη Ρόδο για την ανοικοδόμηση, ταιριάξανε και κάνανε πολύ παρέα, κάτι που οδήγησε στα στέφανα. Ο Νικήτας και η Ζωή Αβραμέα στεφάνωσαν το ζεύγος Μορόπουλου.

Ένας άλλος μηχανικός που συνεργάστηκε με τον πατέρα μου ήταν ο Χριστοφίδης (δυστυχώς δεν θυμάμαι το μικρό του όνομα). Ερχότανε συχνά στη Ρόδο με τη γυναίκα του Μαίρη Χριστοφίδου και κάνανε πολύ παρέα με τους γονείς μου και τους Αβραμέα.

Έτσι με το που γεννήθηκε η αδελφή μου η Ζωή Αβραμέα και η Μαίρη Χριστοφίδου έγιναν οι νονές της.

Μετά τα πρώτα χρόνια στη Ρόδο, ο πατέρας μου αποφάσισε να ασκήσει το ελεύθερο επάγγελμα. Το έργο που θυμάμαι είναι οι εγκαταστάσεις της φωνής της Αμερικής στη Ρόδο, που δεν υπάρχουν πια. Το καλοκαίρι με έπαιρνε μαζί του από το πρωί στο εργοτάξιο και με έβαζε να κάνω δουλειές. Η αγαπημένη μου ήτανε να “ποτίζω” το μπετόν με το λάστιχο. Επειδή έβλεπα ότι κάθε Σάββατο πρωί πλήρωνε τους εργάτες, του ζήτησα να πληρώνει κι εμένα, κάτι που έκανε με τεράστιο χαμόγελο. Είχα κι ένα κουμπαρά και τα έβαζα όλα τα χρήματα μου εκεί, αφού κατάφερνα για τα δικά μου έξοδα να παίρνω – με διάφορες δικαιολογίες – λεφτά από την αδερφή μου.

Απέκτησε σχέσεις με τους Αμερικάνους μηχανικούς που είχαν έρθει στη Ρόδο για το έργο, και με μερικούς έγινε πολύ φίλος. Θυμάμαι το ζεύγος  Rosenblatt από την Βαλτιμόρη, που είχαν εγκατασταθεί στη Ρόδο με τα δύο παιδιά τους. Πέρα από το ότι ήτανε υπέροχοι άνθρωποι, είχανε ένα σπίτι τεράστιο στην αυλή του οποίου υπήρχε μία γούρνα που το καλοκαίρι τα παιδιά είχαμε μετατρέψει σε πισίνα, παρόλο που είχε μέσα φυτά και χορτάρια.  Όταν γύρισαν στην Αμερική, οι Rosenblatt μας άφησαν όλες τις συσκευές που είχαν. Η ναυαρχίδα ήταν ένα τεράστιο ψυγείο Westinghouse, στο οποίο χωρούσαμε και η αδερφή μου και εγώ. Το χωριστήκαμε με πόνο ψυχής όταν πέθανε ο πατέρας μου και κλείσαμε το σπίτι στη Ρόδο.

Εκτός από τις προσωπικές σχέσεις όμως, οι Αμερικάνοι μηχανικοί αναγνώρισαν την συμβολή του πατέρα μου στο έργο αποδίδοντας του την τιμητική ιδιότητα του μέλους της American Society of Civil Engineers (ASCE). Ήτανε κάτι για το οποίο ήτανε περήφανος.

Με τους Αμερικάνους σχετίζεται κι ένα άλλο επεισόδιο από τις πατρικές μου αναμνήσεις. Ήτανε Πάσχα του 1965 και πολλά πλοία του Έκτου Στόλου επισκέφθηκε τη Ρόδο. Ο φιλόξενος πατέρας μου κάλεσε 60 αξιωματικούς να φάμε μαζί το Πάσχα. Σούβλισε 10 αρνιά και έφερε και ορχήστρα, με την Αννούλα από το Βόλο, που ήτανε η αγαπημένη του τραγουδίστρια στον κέντρο “Μπαμπούλας“.   Έγινε χαμός, και είχαμε και ειδύλλιο στο τέλος, αφού ένας πλοίαρχος ερωτεύθηκε σφόδρα την εξαδέλφη της μητέρας μου, την θεία Μαίρη, που μας επισκεπτόταν συχνά.

Η φιλοξενία και η απλοχεριά ήτανε έμφυτα στον πατέρα μου. Θυμάμαι τόσους και τόσους επισκέπτες από την Αθήνα, που ερχόντουσαν στο σπίτι μας στη Ρόδο, σχετικούς και άσχετους. Όλους τους περιποιήθηκε σα να ήτανε πολύ κοντινοί φίλοι.

Ένα άλλο χαρακτηριστικό του ήτανε η αγάπη που έτρεφε για τους εργάτες και τους εργοδηγούς που είχε στα συνεργεία του.  Πολλά απογεύματα Σαββάτου, όταν σχολάγανε από το εργοτάξιο, τους πήγαινε με ταξί στον “Μπαμπούλα” να φάνε και να πιουν και να διασκεδάσουν. Όταν μεγαλώσαμε, η αδερφή μου κι εγώ τον πειράζαμε, και τον αποκαλούσαμε “βασιλικό κομμουνιστή”. Γιατί και βασιλικός ήτανε μέχρι το κόκκαλο (στο δημοψήφισμα του 1974 ήτανε για κλάματα) και φερότανε στους εργάτες σα να ήτανε συνέταιροι του. Το “βασιλικός” του άρεσε, για το “κομμουνιστής” είχε σοβαρές ενστάσεις! Από τότε όμως (δεκαετία 1970) έλεγε ότι η Κίνα είναι ο γίγαντας που κοιμάται και κάποτε θα κυριεύσει τον κόσμο.

Στις γιορτές ερχόντουσαν στο σπίτι, μαζί με τις οικογένειες τους, οι επιστάτες και εργοδηγοί. Θυμάμαι τον Λουκά, και τον Τριαντάφυλλο. Αξέχαστος θα μου μείνει ο Αργύρης Γιαννακές (ο “Αργυράκος”) από την Απολακκιά της Ρόδου, που επειδή η οικογένεια του ήτανε στο χωριό και δεν μπορούσε να πηγαινοέρχεται, περνούσε τη βδομάδα στο σπίτι μας, και τα βράδια που βγαίνανε οι γονείς μου, πρόσεχε την αδερφή μου κι εμένα. Ευγενικός, χαμογελαστός, υπέροχος άνθρωπος!

Το 1968 ο πατέρας μου μου ανέθεσε μια ειδική αποστολή. Να τον εκπροσωπήσω στον γάμο της νεώτερης αδελφής του, που θα γινότανε στην Αθήνα. Εκείνος δεν μπορούσε να παραστεί λόγω ανειλημμένων υποχρεώσεων. Με πήγε στον ράφτη, μου έραψε ένα κοστουμάκι, και με έβαλε στο αεροπλάνο. Θυμάμαι ότι είχανε έρθει και μέλη της οικογένειας από την Αμερική, που δεν τους είχα ξαναδεί κι όλοι ρωτάγανε για τον Γιάννη.  Πάντως όλα πήγανε καλά, κι ο γάμος στέφθηκε με επιτυχία.

Εκτός από καλός μηχανικός, ήτανε και καλός δάσκαλος. Όταν σταμάτησε τις εργολαβίες κι έκανε μόνο μελέτες και επιβλέψεις μάζευε στο γραφείο του νέους μηχανικούς και τους βοηθούσε να λύσουν προβλήματα θεωρίας και πρακτικής. Θυμάμαι χαρακτηριστικά τον Κοσμά Σφυρίου, που αργότερα εξελέγη βουλευτής με το ΠΑΣΟΚ, να συνεργάζεται με τον πατέρα μου, τον οποίο και αναφέρει κάθε φορά που συναντιόμαστε.

Η αγαπημένη του βόλτα στην πόλη της Ρόδου ήτανε στο Μαντράκι. Το ταξί – πάντα με ταξί, δεν ήθελε να οδηγεί – τον άφηνε στο Μαντράκι, και αφού έκανε τη βόλτα του πήγαινε στο μεγάλο καφεζαχαροπλαστείο “Ακταίον” και απολάμβανε το ουϊσκι του.

Είχε πολλά παρατσούκλια, αφού τον αγαπούσαμε όλοι. Το πιο χαρακτηριστικό είναι “Σπανιόλος”. Επειδή του άρεσε και η λέξη “μόρτης”, τον λέγαμε κι έτσι. Κι έτσι τον θυμόμαστε.

Johann Wolfgang von Goethe: Where there is much light, the shadow is deep. A shadow is made when an object blocks light. The object must be opaque or translucent to make a shadow. A transparent object will not make any shadow, as light will pass straight through it.

Junichiro Tanizaki:  Why should this propensity to seek beauty in darkness be so strong only in Orientals? The West too has known a time when there was no electricity, gas, or petroleum, and yet so far as I know the West has never been disposed to delight in shadows. Japanese ghosts have traditionally had no feet; Western ghosts have feet, but are transparent. As even this trifle suggests, pitch darkness has always occupied our fantasies, while in the West even ghosts are as clear as glass. This is true too of our household implements: we prefer colors compounded of darkness, they prefer the colors of sunlight. And of silver and copperware: we love them for the burnish and patina, which they consider unclean, unsanitary, and polish to a glittering brilliance. They paint their ceilings and walls in pale colors to drive out as many of the shadows as they can. We fill our gardens with dense paintings, they spread out a flat expanse of grass.

Leonardo (da Vinci): Shadow is the obstruction of light. Shadows appear to me to be of supreme importance in perspective, because, without them opaque and solid bodies will be ill defined; that which is contained within their outlines and their boundaries themselves will be ill-understood unless they are shown against a background of a different tone from themselves. And therefore in my first proposition concerning shadow I state that every opaque body is surrounded and its whole surface enveloped in shadow and light. . . . Besides this, shadows have in themselves various degrees of darkness, because they are caused by the absence of a variable amount of the luminous rays; and these I call Primary shadows because they are the first, and inseparable from the object to which they belong. . . . Junichiro Tanizaki:  And so it has come to be that the beauty of a Japanese room depends on a variation of shadows,heavy shadows against light shadows—it has nothing else. Westerners are amazed at the simplicity of Japanese rooms, perceiving in them no more than ashen walls bereft of ornament. Their reaction is understandable, but it betrays a failure to comprehend the mystery of shadows. Out beyond the sitting room, which the rays of the sun can at best but barely reach, we extend the eaves or build on a veranda, putting the sunlight at still greater a remove. The light from the garden steals in but dimly through paper-paneled doors, and it is precisely this indirect light that makes for us the charm of a room. We do our walls in neutral colors so that the sad, fragile, dying rays can sink into absolute repose.

Junichiro Tanizaki: It has been said of Japanese food that it is a cuisine to be looked at rather than eaten. I would go further and say that it is to be meditated upon, a kind of silent music evoked by the combination of lacquerware and the light of a candle flickering in the dark. In the cuisine of any country efforts no doubt are made to have the food harmonize with the tableware and the walls; but with Japanese food, a brightly lighted room and shining tableware cut the appetite in half. The dark miso soup that we eat every morning is one dish from the dimly lit houses of the past. I was once invited to a tea ceremony where miso was served; and when I saw the muddy, claylike color, quiet in a black lacquer bowl beneath the faint light of a candle, this soup that I usually take without a second thought seemed somehow to acquire a real depth, and to become infinitely more appetizing as well. Much the same may be said of soy sauce. In the Kyoto-Osaka region a particularly thick variety of soy is served with raw fish, pickles, and greens; and how rich in shadows is the viscous sheen of the liquid, how beautifully it blends with the darkness.

 

 

Festive Lunch – 1st January 2015 – Marathon, Attica, Greece

Today I rejoice the passage of time, culminating in the coming of the new year.

There is no better way to do that but a festive lunch, where food and drinks will have almost equal weight and pleasure potential.

The menu draws from Germany, Georgia, Italy and France. Greece adds the traditional cake to finish the meal, and the salad.

Smoked eel is one of the delicacies I will never stop craving for.

My best man, Manolis, brought me a sealed package of two smoked eels produced by Aal-Bruns, a German specialist producer.

As if I knew, I cut the eel in small pieces.

Pairing the smoked eel with a wine was a challenge.

But not for very long.

The gentle knight from Alsace came through the door and brought the solution with him. Two bottles of wine I had purchased in the Metzger winery at the beginning of the 21st century.

I opened the first bottle, full of curiosity: Could a white wine have lasted for almost 18 years?

As you can see in the photo, the golden color of the wine gave the first answer. But this is nothing compared to the taste. Heaven on Earth!

The almost oily wine with its sublime sweetness coats the mouth and prepares it for the infusion with the smoky taste of the eel that literally melts in it. A marriage made in heaven.

I offered to my guests two options for tasting the eel. Both had as support a rectangle of whole grain bread, the first with a touch of butter on it, and the second with a spoonful of mashed pickled cabbage, beetroot, chilli pepper, celery and garlic. I personally enjoyed both, starting with the butter and then going to the pickled mix.

Needless to say, some pieces were enjoyed on their own. In the absolute magnificence of their existence. The taste is so powerful that only a small piece can be truly appreciated and enjoyed without the human being overwhelmed.

The second appetizer was a small piroshki with minced beef, a variation of a Georgian recipe.

It is smooth and spicy and tasty, while the wrapping is an ultra light and thin crepe.

The piroshki were prepared by a good friend.

The terrain is now open for the arrival of the main course, which is veal osso bucco with risotto.

I cooked the veal in a mix of carrots, celery, onions, garlic and tomatoes.

The abundant liquid of the mix I used in the risotto, which I prepared with Arborio rice from Ca Rossa.

The wine to accompany the main dish came from Toscana.

I had purchased both bottles in the winery’s shop near Montalcino, in Tuscany back in 2003.

The first bottle of the 16 year old wine was moderately ok, most likely due to cork problems. Drinkable, but not as rich and full as the second bottle, which gave to all great pleasure.

The risotto was the king of the main dish. It had rich flavor with considerable depth, without any of the elements overpowering the others.

The veal was tender, tasty and the rich sauce accompanied it in the best possible way.

At the end of the meal we shared the traditional “Vassilopitta”, a light cake made with mahlepi (mahlab) spice. Absolutely divine in its simplicity.

Vive le terroir! Family reunion dinner in Marathon, Greece

Terroir is a concept almost untranslatable, combining soil, weather, region and notions of authenticity, of genuineness and particularity — of roots, and home — in contrast to globalized products designed to taste the same everywhere. (1)

Terroir was the theme of the family reunion dinner I hosted in Marathon, Greece.

It is a long way from Chicago, Illinois to Marathon!

But my cousin and his family made it, and here we were, having dinner in the piazzetta of my hunting lodge.

I had some ideas about the menu, but my inner voice was telling me to take it easy and not rush to the market with a shopping list. Instead, I was going to get the best produce and ingredient I would find on the day.

What follows is the result of this process that never fails me.

Inevitably, the menu was based on the ingredients and produce of the terroir, comprising air, soil and sea.

To start with the vegetables, Peter likes beetroot. So I got the best from Vassilis in Marathon.

In addition to the bulb, which I boiled and peeled the skin off, I boiled the leaves. Both were served au naturel, with olive oil, salt, chopped garlic and lemon juice as optional dressing on the side. I particularly enjoy the beetroot with the chopped garlic, much more than with garlic dip (skordalia in Greek). It has a powerful taste, and I particularly like the contrast of the sweetness of the beetroot with the uncompromising sting of the garlic.

Vassilis is also producing zucchini, which are unbelievably tasty.

So, zucchini were my second choice for a summer vegetable to enjoy on the table.

I boiled the zucchini and served them au naturel, with the dressing on the side. The taste of the zucchini without anything is so delicious, that sometimes I eat a couple without dressing, and only after I Add some olive oil, salt and lemon juice.

Moving on, I got some green peas from Livanates, a small town near Thebes.

I cooked them with pomodori, onion, chilli pepper, and parsley.

Another one in the bag.

The next round of dishes comes from the sea.

My fishmonger is just fantastic, and one more he proved himself to be one.

When he saw me he pointed at a skate on the icebed and said. “This is for you”.

I do not argue with statements like this.

I just obey. For my own good.

I boiled the fish, took the flesh off the bones and mixed it in a big bowl with chopped garlic, olive oil, a touch of salt, lemon juice and a little chilli pepper.

Then came the shrimp.

Fished from a bay east of Nafplion, they looked fantastic.

I grilled them as they came off the sea. I add a few bay leaves on the side of the grill, for extra flavor.

Last but not least, I got some super fresh sardines, because I love sardines, and Mary likes them too.

My fish monger gutted them and chopped their heads off. I sprinkled coarse salt over them and grilled them.

I always take them off while they are juicy and soft. My new touch was that I added some mint leaves on the side, to enhance the flavor. It worked.

The sardines were sweet, juicy and delicious.

And as Ferran Adria once said “fresh sardine is better than stale lobster”.

We had a great time, the only problem as Peter said was that there was not enough food.

Next time I will get more.

I visited the restaurant recently, on the occasion of the visit to Athens of dear family members.

As it happens, within days the restaurant will be relocated to Piraeus, so the visit was also a farewell to the nice terrace with view of the Athenian Acropolis.

The Chef of Varoulko is Lefteris Lazarou, one of the best chefs in Greece. The restaurant specializes in seafood, and this is what we had in the menu they offered to us.

The first dish was “Sea bream fillets on a bed of smoky eggplant”. The fillets were adjoined to crispy bread, adding texture to the tasty dish. I liked the eggplant very much, but do not understand the point of adding so many mini ingredients on the dish.

I did not taste anything special in these “vegetable drops”. If the intention is to add color to the presentation of the dish, there are better solutions.

The next dish was the best of the evening. Ground grouper meat  cylinder. It was delicious. A hint of mint and a thick sauce elevated the dish. I could not believe that grouper would taste so good. Another interesting aspect of the dish were the white flakes served on top of the cylinder. IT was fried skin. Simply delicious! As my cousin observed, I have always been a skin-enthusiast, so my verdict was to be expected.

The third dish was an inventive remake of a Greek traditional dish: “Stuffed cabbage”. The difference being that in the traditional dish the stuffing is pork meat, whereas chef Lazarou stuffed the cabbage with a tasty seafood mix that was not cohesive. The primary taste I could make out was that of shrimp, both in the stuffing and in the sauce.

The dish had some foam on top. It tasted of dill and lemon. I personally do not like foams, but this one was good. The fact however remains, that the foam always destryes the visual impression of the dish.

It is also interesting to note that chef Lazarou was not a fan of foams and similar gimmicks, but obviously he surrendered to the wave of customer demand. How can you go to a Michelin – starred restaurant and not be bombarded with foamy dishes?  What are you going to say to your friends, if there is no foam on the food?

The fourth dish was the less memorable of all, and as it were submerged under a thich layer of foam, there is no photo to be shown.

It was John Dory was a porcini mushroom sauce, chick peas and a parmesan foam. I liked the fish, but the dish overall did not come together for me.

We enjoyed the dishes with a superb white wined from Santorini, Greece: Asyrtico Sigalas 2013.

Three deserts ended the dinner. My favourite was the Orange Cake. Simply because to create a sirupy cake with balance is difficult. This was almost perfect. And the accompanying vanilla ice cream was delicious.

Overall it was an excellent dinner. Next time though, I will ask for my dishes to have no foam!!!!
