Telemachus Art Grill: A meat eater’s dream in Kifissia, near Athens, Greece

Telemachus was the son of Ulysses. George and Kostas Tsiligiris are the grandsons of Telemachus Tsiligiris, the best butcher the wealthy suburb of Kiffisia in the north of Athens has ever known. In their “Telemachus Art Grill”, located in the building of their grandfather’s shop, they serve excellent quality meat, expertly prepared and served.
During my visit I indlulged in offal, and bypassed the “standard” offerings like steak tartare and lamb kebab, leaving them for the next visit.
When I eat offal I have the urge for a nice fresh green salad that will counterbalance the intensity of the offal.

Nothing could better serve such a pupose than the rucola and grana salad that was served with pomegranate seeds.

The salad was accompanied by a delicious Greek white cheese, mastelo, grilled on charcoal.

The “kokoretsi” that followed was without any reservation the best I have tasted in my life to date, and I can tell you, I have tasted quite a few.

For the uninitiated, kokoretsi is an offal delicacy, grilled on a spit. It is a long cylinder, the center of which comprises lamb’s liver and lungs and sweetbreads. The core is surrounded by  a thin layer of fat to keep it moist and juicy, and an outer layer of lamb’s intestine.

First of all, it was juicy and moist, and served at the right temperature.

It was sweet and tender. The salt and pepper was just right, providing support to the bouquet of offal tastes, rather than dominating them.

The fat layer next tot he intestine was an absolute gastronomic marvel.

It had kidneys in it! First time I tasted kokoretsi with kidney!

Absolutely delicious!

I must confess I did not want anything more after the tasting of the kokoretsi. but as it happened, I had one. And it was, oddly enough, a delicacy I was thinking about a couple of days ago. Lamb kidneys on the grill.

Expertly cooked, pink on the inside, with just a touch of salt, pepper and oregano, these kidneys are the epitomy of an offal delicacy.

The wine that accompanied this delicious meal came from South Africa. It was a shiraz with strong body and deep bouquet.

The service is excellent.

Kokoretsi on charcoal but not on the spit – The agony and ecstasy of the grill

This is a post about kokoretsi, the offal delicacy, grilled on charcoal. The challenge is that on this occasion there is no spit.

Αυτό το άρθρο έχει θέμα του το ψήσιμο του κοκορετσιού στα κάρβουνα. Η πρόκληση προέρχεται από το ότι το κοκορέτσι δεν έχει περαστεί σε σούβλα, αλλά είναι σε δίχτυ.

“Εκ του τέλους άρχεσθαι”  Άγνωστος Σύγχρονος Φιλόσοφος

Ο Galip Tokoz, ιδιοκτήτης της αλυσίδας ταχυφαγείων Sampiyon Kokorec, δήλωσε σε δημοσιογράφο εφημερίδας: «Το κοκορέτσι είναι για τους Τούρκους σαν την μορφίνη».

Αγαπημένο το κοκορέτσι και στην Ελλάδα μας. Σύμφωνα με διάφορα άρθρα που διαβάζω στο διαδίκτυο, το έτρωγαν και οι Αρχαίοι Έλληνες χιλιάδες χρόνια πριν. Ένα άρθρο αναφέρει ότι στον Όμηρο το κοκορέτσι είναι η «πλεκτή». Στο έγκυρο λεξικό Liddell-Scott όμως αναφέρεται ως σπείρα, συστροφή, σχοινί, κορδόνι.

Άλλη μια λέξη που αναφέρεται ότι είναι το κοκορέτσι στην αρχαία ελληνική είναι «μίμαρκυν». Στο ίδιο λεξικό όμως η λέξη «μίμαρκυς» ορίζεται σαν λαγός σε σούπα ή στο ίδιο του το αίμα, με αναφορά στους Αχαρνείς του Αριστοφάνη.

Δύσκολο λοιπόν το να βρεις την άκρη με τους αρχαίους Έλληνες και το κοκορέτσι. Όχι τόσο δύσκολο όμως για τους σύγχρονους. Μαζί με τους Τούρκους και τους Αλβανούς είμαστε σήμερα οι μόνοι που τρώμε κοκορέτσι.

Σύμφωνα με τον καθηγητή Μπαμπινιώτη, η λέξη κοκορέτσι προέρχεται από την αλβανική kukurec. Η αλβανική καταγωγή αναφέρεται και από   την «That Best Bite» που αναφέρει ότι το κοκορέτσι μπήκε μαζικά στην Τουρκική αγορά ταχυφαγείων στη δεκαετία του 1960, όταν πολλοί Αλβανοί δούλευαν στην κρεαταγορά της Κωνσταντινούπολης.

Πρόσφατα έψησα για πρώτη φορά ένα κοκορέτσι στο δίχτυ στα κάρβουνα, γιατί η ψησταριά ήτανε μικρή και δεν χωρούσε σούβλα. Είχα τόσο  μεγάλη αγωνία για το τελικό αποτέλεσμα, που αποθανάτισα το ψήσιμο και έτσι προέκυψε αυτό το χρονικό. Η αγωνία είναι εν μέρει δικαιολογημένη, αφού μέχρι τώρα δεν είχα ψήσει ποτέ κοκορέτσι στο δίχτυ στα κάρβουνα.

Το κοκορέτσι το έφτιαξε ο ΛΑΜΠΡΟΣ, ένα εξαιρετικό κρεοπωλείο στη στενή Ευβοίας, από όπου προμηθεύομαι τα κρεατικά μου. Ζύγιζε 3 κιλά όταν το πήρα. Αφού στράγγιξε καλά ολονυκτίς, ήτανε έτοιμο για ψήσιμο. Πριν το βάλω στην φωτιά το αλάτισα και πιπέρισα ελαφρά. Όταν η πρώτη ύλη είναι υψηλής ποιότητας, πρέπει να διαφυλαχθεί ως κόρη οφθαλμού η πραγματική γεύση και τα αρώματα της, χωρίς διαστρεβλώσεις.

Η αρχή του ψησίματος έχει ένα βασικό σκοπό. Να «ιδρώσει» το κοκορέτσι χωρίς να καεί.  Αυτό σημαίνει δυνατή φωτιά, αλλά και αρκετή απόσταση από τη φωτιά, με δεδομένο ότι δεν έχεις την ευχέρεια να γυρίζεις το κοκορέτσι συνέχεια, αλλά μόνο κάθε 5 λεπτά περίπου. Το χρώμα είναι πολύ ανοικτό.

Μετά από 20 λεπτά το χρώμα έχει αρχίζει να αλλάζει, ενώ έχει αρχίσει να στάζει. Το στάξιμο το σημάδι ότι η θερμοκρασία είναι η σωστή.  Όσο περνάει η ώρα το χρώμα σκουραίνει, ενώ αρχίζει και η ευωδία από τις σταγόνες που πέφτουν στα κάρβουνα και εξαερώνονται σκορπίζοντας εκατομμύρια σωματίδια στον αέρα. Στο χρονικό αυτό σημείο πρέπει να μειωθεί η απόσταση από τη φωτιά, ενώ η συχνότητα γυρίσματος γίνεται 10 από πέντε λεπτά.

60 λεπτά. Αρχίζει να μελώνει. Αυτό που βλέπετε στην επάνω μεριά είναι μια κρούστα γεμάτη νοστιμιά. Με την πρόοδο του ψησίματος βλέπετε και την αισθητή μείωση της διαμέτρου του κοκορετσιού. Καλό σημάδι, και απόδειξη της φρεσκάδας των υλικών. Προσθέτω κάρβουνα στη φωτιά, όχι πολλά, ο στόχος είναι η συντήρηση και όχι η ενίσχυση.

120 λεπτά. Η θερμοκρασία έχει ανέβει πολύ, και αρχίζει να σκουραίνει το έντερο, με την εμφάνιση του φαινομένου Maillard. Η κρούστα επεκτείνεται, το χρώμα σκουραίνει ακόμη περισσότερο.

Το φαινόμενο Maillard είναι στην ουσία ο γάμος μορίων υδρογονάνθρακα με αμινοξέα, στον οποίο προστίθενται και μόρια νατρίου και θείου. Το σκούρο καφέ χρώμα και η έντονη μεστή γεύση (umami)  οφείλονται σε αυτό το φαινόμενο. Το φαινόμενο για να εμφανισθεί απαιτούνται θερμοκρασίες πάνω από 120 βαθμούς Κελσίου. Αν σκεφτούμε ότι το νερό βράζει στους 100 βαθμούς, έχουμε την εξήγηση γιατί τα βραστά φαγητά ή τα φαγητά χύτρας δεν έχουν σκούρο χρώμα, παρεκτός εάν έχουμε προηγούμενα τσιγαρίσει τα υλικά.

Όπως έχει πει ο κάτοχος βραβείου Νόμπελ στη Χημεία Jean-Marie Lehn, «Το φαινόμενο Maillard είναι η πιο διαδεδομένη εφαρμοσμένη χημική αντίδραση στον κόσμο.»

Προσθέτω κάρβουνα στη φωτιά.

160 λεπτά. Το καραμέλωμα έχει απλωθεί παντού. Το μόνο που μένει τώρα είναι να γίνει τραγανό το έντερο στην εξωτερική επιφάνεια, χωρίς όμως να στεγνώσει μέσα.

180 λεπτά. Το τέλος του ψησίματος. 3 ώρες, για 3 κιλά.

Προσέξτε πόσο έχει μικρύνει η διάμετρος! Επίσης, πόσο λεπτή είναι η «φλούδα» με τα έντερα. Και έτσι πρέπει στο κοκορέτσι με φρέσκα υλικά. Σε πολλές ταβέρνες βρίσκω κοκορέτσι τεραστίων διαστάσεων με μια φλούδα έντερα περίπου μισό πόντο. Αυτό δεν μου αρέσει, και «μυρίζει» κατεψυγμένα έντερα από την Ισπανία και εντόσθια από πολύ μεγάλα ζώα.  Το σωστό κοκορέτσι όμως θέλει εντόσθια από μικρό (κάτω του 12μηνου) ζώο και φρέσκα έντερα.

Το αποτέλεσμα της διαδικασίας είναι – χωρίς μετριοφροσύνη – εξαιρετικό. Τα έντερα τραγανά έξω, ζουμερά μέσα, τα εντόσθια γεμάτα χυμούς και αρώματα. Το αλάνθαστο τεστ, το λίπος, είναι γλυκό και δεν σε μπουκώνει. Όσο καλύτερο το ζώο, τόσο καλύτερο και το λίπος του. Το ίδιο ισχύει και για τα γλυκάδια, τα οποία όπως λέει και το όνομα τους είναι γλύκισμα. Τα εντόσθια γεμάτα νοστιμιά.

Μπράβο στον ΛΑΜΠΡΟ που έχει τέτοια ποιότητα, μπράβο και στον ψήστη που ολοκλήρωσε την αποστολή του!  Ζήτω το κοκορέτσι! Και την επόμενη φορά ένδοξο σπληνάντερο! Και γαρδούμπες!

Το φετεινο Πασχα το περασα στους Ωρεους Ευβοιας, μαζι με τα αγαπημενα μου ξαδερφια και ανηψια.

Καθε Πασχα ειναι μια ξεχωριστη γιορτη, με σταθερες που κρατανε αιωνες.

Μια απο τις σταθερες αυτες ειναι και το ψησιμο του αμνοεριφιου στην υπαιθρο.

Μαζι με το απαραιτητο κοκορετσι, φτιαγμενο με τα εντοσθια και τα εντερα των αμνοεριφιων που σφαγιαζονται.

Φετος η ψησταρια του ξαδερφου ειχε ενα αρσενικο κατσικι, ενα θηλυκο αρνι και το πατροπαραδοτο κοκορετσι.

Κι απο κει ξεκινησε μια συζητηση περι  νοστιμιας.

Ποιο ειναι πιο νοστιμο;

Παραλληλα τεθηκε και το θεμα της τρυφεροτητας του κρεατος.

Ισχυει αυτο που λενε μερικοι οτι οσο πιο νοστινο το κρεας τοσο πιο σκληρο; Και το αντιστροφο, οτι δηλαδη οσο πιο τρυφερο τοσο και πιο αγευστο;

Το αρσενικο κατσικι ή το θηλυκο αρνι;

Ειναι φανερο οτι υπεισερχονται παραγοντες που καθιστουν την συγκριση δυσκολη, καθοσον εχομε πολυπαραμετρικη αναλυση: αρνι-κατσικι και αρσενικο-θηλυκο.

Στη συνεχεια θα προσπαθησω να επεξεργαστω αυτο το θεμα, χωρις ομως να υποσχομαι οτι θα δωσω οριστικη και αμετακλητη απαντηση.

Κατοπιν επισταμενης ερευνης και μελετης, προσδιορισα τις ακολουθες παραμετρους νοστιμιας στο κρεας των αμνοεριφιων. Τις παραθετω μαζι με τις σχετικες υποθεσεις περι νοστιμιας.

1. Η τροφη. Το τι τρωγει το ζωο τις τελευταιες εβδομαδες πριν απο την σφαγη του εχει μεγαλη επιπτωση στη γευση του. Θυμαμαι οταν ειχα παει στη Χιο που ειχα “τσακισει” νταλα καλοκαιρι τα κοκορετσια και τα παιδακια, αφου η νοστιμια δεν λεγοτανε.  Οι ντοπιοι μου λεγανε οτι τα αρνακια βοσκανε στα βραχια πανω απο τις παραλιες, οπου ολα τα φυτα ειναι νοτισμενα με την αρμυρα της θαλασσας. Αυτην την εμπειρια ομως την αναφερω χωρις επιστημονικη τεκμηριωση.

2. Ο τροπος σφαγης. Το αγχος που μπορει να προκληθει στο ζωντανο απο την διαδικασια της σφαγης εχει μεγαλη επιπτωση στο pH, που ειναι ισως ο σημαντικωτερος παραγοντας ποιοτητας του κρεατος. Το υψηλο αγχος στο ζωντανο ανεβαζει το  pH σε υψηλα επιπεδα, και κανει το κρεας πιο σκληρο και πιο στεγνο.

3. Ο τροπος ωριμανσεως (σιτεμα). Η ωριμανση ειναι απαραιτητη για να μετατραπει το γλυκογόνο των μυών σε γαλακτικο οξύ. Μελετες εχουν δειξει οτι η ωριμανση του αρνισιου κρεατος ειναι σημαντικος παραγοντας για την τρυφεροτητα του. Κρεας που εχει σχεδον μηδενικη ωριμανση, συγκρινομενο με κρεας με 12ημερη ωριμανση εχει σχεδον διπλασια σκληροτητα. Οι ιδιες μελετες δειχνουν οτι περαν των 12 ημερων, η ωριμανση του αρνισιου κρεατος δεν εχει καμια σχεδον επιπτωση στην τρυφεροτητα του. Εδω θα πρεπει να παρατηρησω οτι στην Ελλαδα – και ιδιαιτερα τις μερες του Πασχα – τα αρνια και τα κατσικια δεν τα αφηνουμε να ωριμασουνε (σιτεψουνε) σχεδον καθολου. Δεν ειναι ασυνηθες να σφαζουν το αρνι το Μεγαλο Σαββατο το πρωι και να το σουβλιζουνε την Κυριακη του Πασχα.

4. Η ηλικια και το βαρος. Δεν μπορεσα να βρω μια γραμμικη σχεση σε οτι αφορα το pH. Καποιες μελετες εδειξαν οτι τα αρνια βαρους 12 κιλων εχουν λιγωτερο pH απο προβατα βαρους 24 κιλων, κατι που ομως δεν ισχυει στα πιο βαρεια προβατα. Η νοστιμια ομως του κρεατος αυανει με την ηλικια, φτανει σε ενα ζενιθ και μετα αρχιζει να πεφτει.

4. Το μερος του σωματος: Το μπροστινο θεωρειται πιο νοστιμο απο το πισινο. Ισως εχιε να κανει με την περιεκτικοτητα σε λιπος, οπως και το ειδος του λιπους. Εν πασιε περιπτωσει, δεν μπορεσα να βρω σχετικες μελετες και ερευνες.

5. Το φυλο: το αρσενικο θεωρειται πιο νοστιμο απο το θηλυκο. Ειναι ομως; Ας ξεκινησουμε απο το pH. Το αρσενικο εχει υψηλωτερα επιπεδα επειδη ειναι πιο νευρικα. Συνολικα ομως, η διαφορα δεν ειναι πολυ μεγαλη. Σε οτι αφορα την τρυφεροτητα, το αρσενικο εχει πιο σκληρο κρεας λογω της τεστοστερονης, που αυξανει το κολλαγονο των μυων. Σε ζωντανα μεχρι 12 μηνων ομως, δεν βρεθηκαν ουσιωδεις διαφορες στη νοστιμια.

6. Ο ευνουχισμος: θεωρειται οτι ενα “αρτιμελες αρσενικο” ειναι πιο νοστιμο απο ενα “ευνουχισμενο”. Αυτο το αναφερω εντελως περιστασιακα, καθοσον νομιζω οτι στην Ελλαδα δεν ειναι συνηθης η πρακτικη του ευνουχισμου.  Στην περιπτωση του Πασχαλινου τραπεζιου στους Ωρεους, ομολογω οτι γευτηκα ενα ημισυ αμελετητου το οποιον ητο εξαιρετικο.

Ευτυχως που ο βοσκος και ο χασαπης διετηρησαν την “ακεραιοτητα του ζωου!

Ελπιζω οι ανωτερω επισημανσεις να αποτελεσουν την απαρχη ενος ωριμου διαλογου επι του θεματος.

Συνοψιζοντας την γευστικη εμπειρια του φετινου Πασχα, εχω να σημειωσω τα  ακολουθα:

α. Το κοκορετσι εξαιρετικο, ισως ομως θα περεπε να βγει απο τη φωτια 15 λεπτα νωριτερα.

β. Η σαλατα μαρουλι αποτελει πιατο υψηλης γαστρονομιας ανα τους αιωνες. Η ποιοτητα των μαρουλιων ειναι τετοια που ανασταινει! Ευγε στην εξαδελφη που ξερει να αξιοποιει τα υπεροχα μαρουλια!

γ. Το σεμνο αμελετητον απεσπασε το χρυσο βραβειο γευσης και υφης.

δ. Το σκληρο κατσικισιο τυρι απο την Κοκκινομηλια, ενα χωριο περιπου 20 χιλιομετρα νοτια των Ωρεων, το γευομαι εδω και 20 χρονια τουλαχιστον, και αποτελει υμνο στην ποιοτητα του γαλακτος και της τυροκομικης τεχνης του παραγωγου. Μαθαινω ομως οτι η γυναικα του εχει βαρεθει τη ζωη της, και προσπαθει να πεισει τον παραγωγο να παρατησει τα τυρια και τα κατσικια και να απολαυσουν τη ζωη. Ελπιζω να μην την ακουσει.

ε. Το κρεας του εριφιου και του αμνου ηταν εξαιρετικο! Και το ψησιμο του εξαδελφου μου κορυφαιο!

The Restaurant of St John Hotel Chinatown, 1 Leicester Street, London

During my recent visit to London (October 2012) I had the opportunity to visit the restaurant in the St John Hotel in London’s Chinatown in two consecutive days.

The Hotel (and restaurant) is located a few meters away from Leicester Square and is easily accessible by all means of transportation.

The reason I went there has a name: Fergus Henderson.

Fergus Henderson is the “Nose to Tail” man. The simple principle that he pushed forward with his cooking is that when we slaughter an animal, it is a matter of respect but also of practicality, to eat all the bits. From nose to tail.

The Hotel in central London’s Leicester Square was opened in the Spring of 2011.

And it’s already a part of London history, housed in Manzi’s, the fish restaurant on the fringes of Chinatown that had been there forever, until suddenly it wasn’t.

Mr. Manzi one day sold everything, and headed off to Mone Carlo, giving to Fergus Henderson and his business partner Trevor Gulliver the opportunity to try out their hotel and restaurant concept in Central London.

The restaurant’s layout is simple with an open kitchen.

The staff is exceptional indeed. You feel right at home.

And what is most important for the weary traveller, is that the kitchen is open continuously from 12 noon to 12 midnight. So no matter when you can, you drop by and eat. This is exactly what I did on both days.

The two-day feast began with “Devilled Pig’s Skin & Smoked Cod’s Roe”.

When I saw it arriving to the table, I thought that this is not a dish, this is a sculpture. Nevertheless, I went ahead and enjoyed it.

This is a dish that epitomizes the concept of the appetizer. Crunchy texture, accompanied by the creamy and flavorfull roe.

I absolutely loooooove black pudding, or boudin noir as it is known in France.

It is one of the humblest but terribly delicious dishes, a real tribute to blood and guts.

It is only on the breakfast menu, but when I asked for it, at around 1730 hrs on a Friday afternoon, for what was a lunch and dinner meal after an exhaustive business meeting, it appeared miraculously in front of me. The restaurant’s maitr d’ hotel, a delightful lady, presented it with a glorious smile. The guys in the open kitchen were watching knowingly. I was in heaven! Needless to say, the divine pudding was “house” made.

Although Henderson is known as the “offal” man, St John Hotel have a menu with seafood items in addition to the “regular” meat and offal items. One of them was the cuttlefish with fennel and green sauce.

I was very curious to taste it, as cuttlefish is extremely light in flavour, and difficult in texture.

I was really lucky to taste this dish. Perfectly tender, full of flavor, and I had to ask for a spoon for the sauce.

The “Snails, Duck Hearts & Lovage”, sounded like a strange mix of diverse ingredients, but this was one more reason to taste it. And it worked!

I enjoyed the subtlety of the snails, and the robustness of the heart’s texture. The rather big chunks of fried bread were absolutely delicious.

The “Ox Heart, Beetroot & Red Cabbage” is a tribute to texture.

Firm, robust muscle, perfectly accompanied by the crunchy red cabbage and the beetroot.

And now the ultimate classic: “Bacon & Beans”. I do not recall bacon ever tasting so good.

After the black pudding, this is the second dish that made me feel that I was in my mother’s kitchen.

The bacon was juicy and full of flavors, the beans tender and tasty, and the sauce absolutely divine, and thick.

I was very curious to taste a fish dish. Especially after having tasted the meat heavy weights. I chose “Brill, Leeks & Aioli”.

I wish I could eat more leeks and aioli. But I couldn’t.

A good meal (or two meals for that matter) always ends with a new one.

So here is my list of what I wish to taste during my next visit: Mussels, Razor Clams, Lamb Sweetbreads, Pork Chops…

Lunch in Marathon: Pork chops – Lamb offal (Gardoumbes) – Aubergines

Among other things, I have recently moved out of the metropolitan area of Athens to the hills overlooking Marathon, some 40 kilometers away from the center of Athens. The arson fire that devastated the area in 2009 has left its marks on the landscape, a stark reminder that the worst enemy of Greece are the Greeks themselves!

After settling in, I invited the “closed” circle to come over and have lunch “al fresco”, in the open fresh air.

As the weather is still good, with temperatures reaching 21 degrees Centigrade, the cooking was done outside as well. Charcoals provided the much needed fire.

I start with the aubergines, or eggplants, which I can eat all the time, every time. I got them from a farmer who is down the road from where I am. I cut them in thick slices and put them in salted watr for one hour. The slices must be thick because they will be grilled and we do not want them to be burned and dried, but soft and juicy, albeit with a carbonated crust.

The pork chops came from the shoulder of the animal, in order to have the necessary marbling. I always prepare the meat by placing it in a mild solution of sea salt and herbs. After two hours the meat is juicier, its color lighter, and it tastes a lot better! If you have not done it before, try it now. With pork! It also works wonders with chicken.

Finally, the “Gardoumbes”, lamb’s intestines and sweetbreads on a stick, I got from a local butcher who promised me that they were fresh and local. He even showed me a bag with some intestines that he was taking home after work.

We now get to the very serious business of the grill. The aubergines need just a coat of olive oil in order not to stick to the grill base. Frequent turns ensure that the surface will be only marginally “burned”. There is a very sensitive balance between the brown and the black of the surface, so be careful!

The pork chops also require a coating of olive oil in order for them not to stick on the mesh. The surface must be golden brown and the inside juicy and tender.

I serve the chops on a bed of finely chopped garlic. The combination of the charcoal flavour with the garlic is simply unbeatable. I do the same with the eggplants, adding a bit of vinegar or lemon.

Finally, the “gardoumbes” take a lot of time to cook, and the fire must be relatively mild, otherwise the outside will be dry and the inside uncooked.

All in all, a lunch that honoured the Greek pastoral tradition with pork and lamb, the two animals that have supported the inhabitants of the south Balkan area for centuries.

Beef Kidneys with porcini mushrooms, and red cabbage and cauliflower puree

This is the result of falling half asleep on the morning flight to Athens and then rushing to the hypermarket to get some basics for the weekend. When I stumbled upon the beef kidneys I knew what I was going to cook. It is one of my favorite materials, both in flavor and in texture, but it is hard to find.

The first step is to marinate the kidneys. I use vinegar, sweet wine, chili pepper flakes, coriander seeds, oregano, coarse sea salt and black pepper. I cover with bay leaves and leave it to rest for one hour or so.

A nice cauliflower and some red cabbage lead me to the second step. I slice the cabbage and simmer it in a bit of olive oil in a deep pan. I add the cauliflower cut in small bunches.

I add fresh coriander and parsley, some coarse sea salt and black pepper, cover and let cook without any water, until it becomes very soft. Remember, all this is going to make the puree that will provide the soft and comforting company ot the wild, demanding kidneys and sudjuk. Not an easy task at all!

When the cabbage is soft, put everything in the mixer and prepare a nice thick mix. I add two eggs and a bit of flower to thicken it up, then serve in the shallow container, and bake for 15 minutes in high heat, to let the excess liquid evaporate and condense the flavor.

I take out of the oven and let it rest for 10 minutes.

In the meantime, the kidneys have been sliced and are simmering in the pan with the porcini and some of their marinade.

The last step is to slice and gently fry the sudjuk.

I got this Armenian sudjuk which turned out to be very good.

Be careful not to slice it very thin, as it will go dry very easily.

I serve on a large dish with a green salad on the side.

If you open a bottle of chianti wine you will be very happy with this dish!  Although any red with a good body will do the job! But take my word, do not eat this dish without a full-bodied red wine!
