Η ανάμνηση ενός κακού γεύματος

Ένα γεύμα μπορεί να αποτελέσει πηγή πολλών θετικών εμπειριών, να διεγείρει τις αισθήσεις, ακόμη και να δημιουργήσει ένα αίσθημα ευδαιμονίας. Από την άλλη μεριά, ένα γεύμα μπορεί να είναι τόσο κακό, που δεν μπορείς να το ξεχάσεις ακριβώς επειδή ήτανε τόσο κακό.

Ένα τέτοιο γεύμα ανασύρει από την μνήμη του και μοιράζεται μαζί μας ο Γερμανός συγγραφέας Βίνφριντ Γκέοργκ Ζέμπαλντ (1944-2001) στο οδοιπορικό πεζογράφημα του “Οι δακτύλιοι του Κρόνου” (Die Ringe des Saturn, Vito von Eichborn Verlag, Frankfurt am Main, 1995). Σημειώνω ότι στην έκδοση FISCHER Taschenbuch του 1997, υπάρχει και ο υπότιτλος “Eine englische Wallfahrt” (Ένα αγγλικό προσκύνημα).

Όπως γράφει μόλις στην πρώτη πρόταση του κειμένου, ο συγγραφέας ξεκινάει το οδοιπορικό του στην κομητεία του Σάφολκ “με την ελπίδα να αποδιώξω το κενό που με κυριεύει κάθε φορά που έχω τελειώσει μια σοβαρή δουλειά”. Ενδιαφέρον παρουσιάζει το πολιτιστικό σχόλιο του αρθρογράφου της αγγλικής εφημερίδας Γκάρντιαν (The Guardian) Στούαρτ Τζέφρις (Stuart Jeffries) ότι οι Άγγλοι πάνε μια βόλτα για να ανακάμψουν, ενώ οι Αμερικάνοι για να ανακαλύψουν.

Ο Ζέμπαλντ αναφέρεται στο δείπνο που είχε στην πόλη Λόουσtοφτ (Lowesoft), που είναι παραθαλάσσια και βρίσκεται στην κομητεία του (Suffolk), στην ανατολική ακτή της Αγγλίας. Για τους μουσικόφιλους αναφέρω ότι στην πόλη αυτή γεννήθηκε το 1913 ο συνθέτης Μπέντζαμιν Μπρίττεν (Benjamin Britten), που είναι κατά τη γνώμη μου ο κορυφαίος Άγγλος μουσικοσυνθέτης όλων των εποχών.

Δεν μου είναι γνωστό, και ο συγγραφέας δεν δίνει κάποιον λόγο για την επίσκεψη του στην πόλη αυτή. Κατέλυσε στο ξενοδοχείο Άλμπιον (Albion) που βρισκόταν επάνω στην παραλιακή λεωφόρο, και μετά από μια βόλτα επέστρεψε στο ξενοδοχείο, όπου και δείπνησε.

“Εκείνο το απόγευμα ήμουνα ο μοναδικός πελάτης στην πελώρια αίθουσα εστίασης, και το ίδιο άτομο (που είχε προηγούμενα υποδεχθεί τον Ζέμπαλντ στην είσοδο του ξενοδοχείου κατά την άφιξη του) πήρε την παραγγελία μου και λίγο μετά μου έφερε ένα ψάρι που είχε αναμφίβολα παραμείνει ενταφιασμένα στην βαθιά κατάψυξη για χρόνια. Η πανοπλία από το πανάρισμα του ψαριού είχε καψαλιστεί σε ορισμένα σημεία από το ψήσιμο, και τα δόντια του πιρουνιού μου λύγισαν επάνω της. Μα την αλήθεια, ήτανε τόσο δύσκολο να τεμαχίσω κάτι που αποδείχτηκε ότι ήτανε τίποτε περισσότερο από ένα αδειανό κέλυφος, που το πιάτο μου είχε καταντήσει να είναι ένα απεχθές συνονθύλευμα όταν τελείωσε αυτή η επιχείρηση. Η αλοιφή ταρτάρ που είχα αδειάσει από ένα πλαστικό σακουλάκι είχε αποκτήσει ένα γκρίζο χρώμα από την επαφή της με τα καψαλισμένα τρίματα του παναρίσματος, και το ψάρι, ή εκείνο που έπαιζε τον ρόλο του ψαριού, κειτόταν σαν ένα θλιβερό στραπάτσο ανάμεσα στα μπιζέλια που είχανε το χρώμα του χορταριού και τα μουλιασμένα υπολείμματα από τις τηγανητές πατάτες, που γυάλιζαν από το λίπος που τις κάλυπτε.”

Ο σιδηροδρομικός σταθμός του Λόουστοφτ

“Οι δακτύλιοι του Κρόνου” έχουν μεταφρασθεί στα ελληνικά από τον Γιάννη Καλιφατίδη και εκδοθεί το 2009 από τις εκδόσεις “ΑΓΡΑ”.

Το σημερινό πιάτο έχει θέμα τους μοσχιούς, ή μοσχοχτάποδα, ολόφρεσκους, μαγειρεμένους με αρωματικά φυτά, λιαστές ντομάτες, λεμόνι τουρσί και καυτερές πράσινες πιπεριές.

Τους αγόρασα σήμερα το πρωί στην τιμή των 7 ευρώ ανά κιλό. Το χταπόδι παραδίπλα στον πάγκο του ιχθυοπώλη είχε 18 ευρώ το κιλό.

Ομολογώ όμως ότι εκτός από την τιμή, ο κύριος λόγος που μαγειρεύω μοσχιούς είναι επειδή μου αρέσουν τα μικρά τους ποδαράκια. Και η γεύση τους δεν απέχει πολύ από εκείνη των μικρών χταποδιών, που έτσι κι αλλιώς είναι σπάνια. Μικρά χταπόδια έχω φάει μόνο στη Γένοβα της Ιταλίας και το Παλέρμο της Σικελίας.

Μέρος της όλης διαδικασίας είναι το καθάρισμα τους. Ιδιαίτερα σημαντικό, αφού στο καθάρισμα καταλαβαίνεις αν η αρχική εντύπωση της φρεσκάδας είναι πραγματική ή όχι. ‘Όταν είναι φρέσκα, το καθάρισμα της κουκούλας αφήνει στα χέρια ένα άρωμα θαλασσινής φρεσκάδας.

Βρίσκω επίσης ότι η εξοικείωση με την ανατομία του όντος προς βρώση αποτελεί και μια διαδικασία θεραπείας του θεμελιώδους τραύματος της μαγειρικής, που συνίσταται στην χρήση συστατικών που κάποτε υπήρξαν ζώντα όντα.

Η σημερινή συνταγή δεν έχει ντομάτα, παρά μόνο λιαστή.  Επίσης δεν έχει κρεμμύδια.

Τα συστατικά είναι τα ακόλουθα:

  • Λιαστές ντομάτες
  • Λεμόνια τουρσί
  • Καυτερές πράσινες πιπεριές
  • Σκόρδα
  • Φύλλα λουϊζας
  • Φύλλα δάφνης
  • Δενδρολίβανο
  • Αλάτι
  • Ψιλοκομμένος μαϊντανός και βασιλικός για τα μακαρόνια
  • Λίγο ελαιόλαδο

Αφού πρώτα τσιγαρίσω τις ψιλοκομμένες πιπεριές, τα σκόρδα, τις λιαστές ντομάτες και τα λεμόνια (μόνο τη φλούδα, η σάρκα από το τουρσί δεν τρώγεται)  μαζί με τα αρωματικά φυτά, προσθέτω τους καθαρισμένους μοσχιούς και αφήνω να πάρουν μια βράση. Στη συνέχεια χαμηλώνω τη φωτιά, σκεπάζω και αφήνω να μαγειρευτούν στο ζουμί τους για 20 περίπου λεπτά. Δεν προσθέτω καθόλου νερό.

Αφού μαγειρευτούν οι μοσχιοί, τους αφαιρώ από το μαγειρικό σκεύος και προσθέτω νερό, ίσα ίσα για να βράσουν τα μακαρόνια. Χρησιμοποίησα σήμερα τα χωριάτικα μακαρόνια από το “‘Έξοχον“. Είναι εξαιρετικά. Δεν πετάω σταγόνα μετά. οπότε χρειάζεται προσοχή να είναι το νερό όσο ακριβώς χρειάζεται.

Μόλις μαλακώσουν τα μακαρόνια σβήνω τη φωτιά, προσθέτω τον μαϊντανό και το βασιλικό, ανακατεύω καλά, και προσθέτω λίγο ελαιόλαδο.

Προτιμώ να χρησιμοποιώ τα μακαρόνια που είναι σαν σωλήνες επειδή όλη η σάλτσα και η νοστιμιά εισέρχεται και παραμένει εις την κοιλότητα τους.

Σερβίρω μακαρόνια με μοσχιούς μαζί, με ένα δροσερό ροζέ, για παράδειγμα το “ΓΕΝΕΣΙΣ” του ΚΕΧΡΗ,από σταφύλια Gewurztraminer και Ξινόμαυρο. Και μετά δεν ζητάω να πάω στον Παράδεισο, για λίγο είμαι ήδη εκεί.  Τι παραπάνω μπορεί κανείς να ζητήσει από την μαγειρική;

 

Seafood Restaurant Marina, Potidaia, Halkidiki – Εστιατόριο Μαρίνα, Ποτίδαια, Χαλκιδική

I visited Marina restaurant one fine autumn afternoon, to have a sip of ouzo (maybe more) and some meze.  This is my brief recount of the experience. The article is in Greek.

Επισκέφθηκα το εστιατόριο “Μαρίνα” ένα όμορφο φθινοπωρινό μεσημέρι για ένα ποτήρι ούζο (ίσως και δύο) και θαλασσινούς μεζέδες.

Η εξυπηρέτηση εξαιρετική από την πρώτη στιγμή, τα πάντα πεντακάθαρα, τα τραπεζομάντηλα φρεσκοσιδερωμένα. Μια εικόνα αρχοντιάς, χωρίς περιττές πολυτέλειες.

Η σαλάτα με φρέσκο κρίταμο ήτανε μια ανάμικτη εμπειρία. Από τη μια μεριά η εξαιρετική ποιότητα του κρίταμου, από την άλλη όμως μια βαρετή και άσχετη πρόσμιξη άσπρης μαλακιάς μυζήθρας. Η μυζήθρα ήτανε τόσο σαρωτική, που δεν ακουγότανε ούτε η οξύτητα από τα ντοματίνια.

Ο αλίπαστος γαύρος ήτανε εξαιρετικός ως προς την υφή και την φρεσκάδα, όμως το αλάτι είχε ξεπεράσει τα όρια που τιμούν την πρώτη ύλη. Το αλάτι είναι θανατηφόρο όπλο όσον αφορά την γεύση. Εν προκειμένω ο τίμιος και φρεσκότατος γαύρος υπέστη θλιβερό γευστικό θάνατο.

Το μπαρμπούνι που ήρθε στη συνέχεια άξιζε πολλά, χωρίς όμως να αγγίζει την τελειότητα.  Η πρώτη ύλη εξαιρετική, τα αρτύματα συγκρατημένα, το ελαιόλαδο εξαιρετικό.

Τα χτένια που ακολούθησαν ήταν το κορυφαίο πιάτο της ημέρας. Ψημένα στην εντέλεια, ολόφρεσκα, απλούστατα. Σχεδόν τέλεια. Κάθε φορά που γεύομαι τα χτένια του Αιγαίου δεν μπορώ να μην τα συγκρίνω με τα χτένια του Ατλαντικού. Η νοστιμιά σε αυτά τα μικρούλια κουφετάκια του Αιγαίου είναι απλά ασύγκριτη. Χρειάζεται όμως και η τέχνη του ψήστη, για να ψηθούν ακριβώς όσο πρέπει, ούτε δευτερόλεπτο περισσότερο, ή λιγότερο.

Η ψητή μελιτζάνα υποτίθεται ότι ήτανε καπνιστή, όμως δεν ίσχυε κάτι τέτοιο. Και η προσθήκη της λευκής μυζήθρας έκανε το πιάτο αυτό παντελώς άνοστο. Κρίμα.

Εν κατακλείδι, η “Μαρίνα” είναι ένα μαγαζί πάνω από τον μέσο όρο, με δυνατότητες να πάει πολύ ψηλότερα. Αρκεί να μην επαναπαυθεί – πριν την ώρα της – στις δάφνες της.

 

 

 

Top Gastronomic Destination in Greece: Papaioannou Fish and Seafood Restaurant in Mikrolimano, Piraeus

I visited Papaioannou’s Fish and Seafood Restaurant in Mikrolimano, Piraeus, on a busy Sunday lunch time. The maitre D informed us that due to the holidays the variety of dishes is not as wide as it usually is. This was a most welcome first sign of the attention the restaurant pays to the quality of its ingredients. What followed confirmed this in the most positive way. Papaioannou Restaurant is a top gastronomic destination in Greece.

Sea urchin eggs.We started with the eggs in their own natural juices and nothing else. No salt, no lemon, no olive oil. As it should be. As mother nature gave it to us.

The accompanying drink was ouzo. If you do not like ouzo, you may try tsipouro, or a dry white wine with high acidity, like asyrtico.

Red mullet sashimi followed. It needed no dressing whatsoever. But eating an olive and a leaf of rocket after tasting the fish was sensational.

Crayfish tartare.This is by far the best crayfish dish I have ever tasted. You cannot imagine the sweetness, the kindnes of the flesh as it unleashes its flavours in the unuspecting and unprepared oral cavity. It is so captivating that it continues to unravel its magic until it has reached the lower depths of the oropharynx.

Fried baby cuttlefish. The flesh melts in your mouth, while the crispy ink explodes in in millions of parcels of pleasure. Infinity as a sensation must be this bombardment of the taste buds by these agents of hedonism.

Grilled squid sweet as sin cand tender as desire ame next. The chef had given it just a touch of olive oil for the grill, and a light sprinkle of salt. It needed nothing else. No lemon, no extra salt.

Grilled grouper.The flesh is moist, gelatinous, full of the aromas of the sea, soft yet firm. Eating in Papaioannou is not just an experience, it is an adventure. Dear reader, plase take a second to note that there is no dressing whatsoever on the fish, just the salt the chef put on it while on the grill. This is not an ommission, it is a deliberate act. No dresing is nedded! Because it will distort the gastronomi message, muffle the sounds of hedone emanating from the body and mind of the patron.

Grilled red mullet filet.It must be very few people on this planet who can perfect the grilling of red mullet’s skin to a degree that it complements the juicy succulent flesh in a way that makes one believe in miracles. At the end of the day, metaphysics must have a physical grounding, and it might very well be this dish.

Fried red mullet filet. The chef, George Papaioannou has a reputation for frying fish to perfection. He lived up to it. The filet of flesh was melting in the mouth, releasing all the flavours of the red mullet’s skin. And as always with fresh fish, a sweetness enveloped every sensation in the silky delusion of never ending pleasure.

Grilled sea bream. It was time to return to reality and the grilled sea bream pulled it through.

The grilled mediterraneam slipper lobster (kolochtypa) ended the feast. This was an ode to the endless adventure of texture interweaved with flavour.

As I now recover from the flood of sensory stimuli that was mercilely unleashed against my cells I can say without any hesitation that Papaioannou is quite possibly the best fish and seafood restaurant in Greece today.

In addition to the food, service is top class. The team is professional, friendly and efficient.

The location in Mikrolimano is ideal for a long lunch. We spent something like 4 hours and enjoyed all variations of light on the sky and the sea.

 

 

 

 

 

 

 

 

 

 

Sushimou: a gastronomic jewel a stone’s throw from Syntagma Square in Athens

Sushimou is small. It only has a bench and stools around it. You need to reserve in advance in order to get in. And you better get in, otherwise you will not, dear Athenian or visitor from wherever, taste the delicious sashimi and nigiri that sushi chef Antonis Drakoularakos is preparing for you.

I booked the “stools”, showed up on time, and then ordered “omakase”, which is the chef’s choice.

Restaurant Boroa Jatetxea – Second visit

Back in 2015 I wrote about my first visit to the Boroa Jatetxea Restaurant. I write this following my second visit, which took place in November 2016.

The converted 15th century farmhouse is a wonderful building, spacious and “warm”. Do not let the rural setting fool you. This is a one Michelin star restaurant.

Íñigo Elorriaga, a Basque who lives in nearby Gernica (Guernica), is the chef in charge of innovation.

Jabier Gartzia Ruiz, a native of Gernica, is the head chef.

Oxtail capuccino came as a welcome drink and it was delicious! Light enough not to overpower the senses, but still capable of providing flavor, it was smooth and warm.

Chorizo is always welcome on my plate, especially this one that was accompanied by a sauce that had all the flavor of this wonderful sausage.

Slightly smoked European eel and avocado in spiced quince veil over foie gras with citric aroma was my starter. An absolute winner, a dish I could again and again without ever getting bored.

Cod tasting (grilled, vizcaina and pil pil) was my main course. I have a special devotion to salt cod and it cannot get any better than what I taste in Basque Country.

The dish has three pieces, wach cooked in a different way.

The first is pil-pil, which is a traditional Basque preparation. The sauce is an emulsion of olive oil and the cod’s juices.

The second piece is “vizcaina”, another local preparation, with a thich red sauce. The purists say that the sauce should be made only with red peppers, that is without any tomatoes. Today it is more often than not that you find a tomato thrown in the sauce.

The last preparation is grilled. This is a “nowhere to hide” preparation. The smallest fault of the fish will reveal itself on the grill, as well as the cook’s ability to maintain all the juices and aromas of salt cod’s most expensive cut.

Raspberry, yogurt and Dulcey junket Dulcey crumble, raspberry and yogurt junket, creamy yogurt, different Dulcey textures and raspberry meringue was my desert.

The desert was recommended to me by the propritetor, Mª Asun Ibarrondo, and I obliged

The desert was a harmony of tastes and textures and aromas, and by the time I finished it I could only think of how hard it would be to improve on such a finish to a wonderful meal.

Η καλή μαγειρική είναι εκείνη που στοχεύει σε κάτι που το ξέρει καλά  και το πετυχαίνει πάντα. Καλή μαγειρική είναι η κουζίνα της γιαγιάς, της μαμάς, της Λωξάντρας, και πάει λέγοντας. Οι αποτυχίες στην καλή μαγειρική είναι λίγες.

Good cooking aims always at something that is well known and it achieves it all the times. This is the cooking of the grandmother, mother, and so on. Failures in this cooking are rare and nobody remembers them.

Η υψηλή μαγειρική (haute cuisine) είναι πάνω απ’ όλα τα άλλα η επιδίωξη του τέλειου, με την επίγνωση ότι κάτι τέτοιο είναι ανέφικτο. Οι αποτυχίες στην υψηλή μαγειρική είναι ο κανόνας. Είναι μια μάνα που τρώει τα παιδιά της. Για τον λόγο αυτό κάθε πιάτο υψηλής μαγειρικής είναι και μια ευκαιρία να πανηγυρίσουμε να αποθεώσουμε τον μάγειρα, και να σπεύσουμε να γευθούμε κάτι που είναι εφήμερο αλλά και παντοτινό. Γιατί η μνήμη του δεν σβήνει.

Haute cuisine, on the other hand, is the pursuit of perfection, with the full knowledge that it is unattainable. Failures are the rule in haute cuisine, it is a mother that kills its children. It is for this reason that every successful dish of haute cuisine makes me jubilant and I prooceed to taste it both in its transience and its eternity. Because its memory never fades away.

Σήμερα παρουσιάζω ένα πιάτο υψηλής μαγειρικής, που έφτιαξε ο Λευτέρης Λαζάρου και είχα την τύχη να γευθώ στο «Βαρούλκο».

Today I present a haute cuisine dish prepared by Chef Lefteris Lazarou in his “Varoulko” restaurant near Piraeus.

Από την περιγραφή φαίνεται το απλούστερο των απλών. Ριζότο με αυγά αχινού. Τα φαινόμενα όμως απατούν. Όσο απλούστερο πιάτο, τόσο μικρότερα τα περιθώρια για να κρυφτεί ο μάγειρας πίσω από εξωτικά υλικά και σύγχρονες τεχνικές όπως οι αφροί που κατακλύζουν τόσα και τόσα πιάτα. Ο μινιμαλισμός είναι ο χειρότερος εχθρός της «δήθεν» υψηλής μαγειρικής.

If one looks at the description of the dish, she might be misled by its simplicity. However, the simpler the dish, the less room the chef has to hide, behind exotic ingredients and modern techniques, like covering the dish with foam. Minimalism is the arch enemy of the supposedly haute cuisine.

‘Ας δούμε τις δυσκολίες του πιάτου.

Καταρχάς το ριζότο από μόνο του είναι μια πρόκληση. Το να φτιάξεις ένα καλό ριζότο είναι δύσκολο. Κυρίως επειδή πρέπει να σεβαστείς το ρύζι και να μην προσθέσεις τόσες άλλες γεύσεις που εξαφανίζουν τη γεύση του ρυζιού, ξεκινώντας από το απλούστερο όλων, το αλάτι, και συνεχίζοντας με τον ζωμό θαλασσινών και λαχανικών μέσα στον οποίο γίνεται το ριζότο. Πρόσφατα γεύθηκα ένα ριζότο σε γνωστό εστιατόριο, που είχε καταφέρει να εξαφανίσει τη γεύση του ρυζιού, χρησιμοποιώντας ένα ζωμό δυναμίτη που αναισθητοποιούσε τον ουρανίσκο.

Let us identify the difficulties of the dish.

To start with, making a risotto is a challenge by  itself, because you must respect the rice and not make it disappear behind other tastes like salt, and the broth. I recently tasted a risotto in a Michelin starred restaurant of Athens, in which the broth was so strong that had exterminated the taste of the rice.

Προσθέτοντας τα αυγά αχινού, αυτό το έδεσμα εδεσμάτων, καθιστά το πιάτο σχεδόν αδύνατο. Μιλάμε για την μεταξένια υφή τους, που τόσο εύκολα καταστρέφεται, μιλάμε για τα αρώματα που τόσο γρήγορα χάνονται στις γειτονιές των πιο ισχυρών.

Adding the sea urchin eggs, this delight of delights, makes the dish almost impossible. How are you ging to respect its texture and the flavor that is so subtle?

Όλα αυτά δεν αποτελούν εμπόδιο για τον Λευτέρη Λαζάρου, που στο πιάτο αυτό μεγαλουργεί.   Οι ισορροπίες γεύσεων που πετυχαίνει είναι αξιοθαύμαστες. Τα καταφέρνει να συνυπάρχουν αρμονικά το ρύζι με τον αχινό, διατηρώντας το καθένα την προσωπικότητα του.

None of these difficulties tames Chef Lazarou, who comes out victorious. He manages to add the sea urchin eggs to the dish in such a way that they retain their velvety texture and flavor.

Ο σεβασμός στην πρώτη ύλη είναι εντυπωσιακός. Προσέξτε τα αυγά του αχινού. Είναι τόσο «ζωντανά» και ακέραια σα να βγήκανε από το κέλυφος μόλις τώρα. Καμία σχέση με  τα ταλαιπωρημένα και διαλυμένα συναφή που μοιάζουν με αποτυχημένη καροτόσουπα.

Το πιάτο είναι και χάρμα οφθαλμών. Το χρυσαφένιο ριζότο με την τερακότα του αχινού και τα φυλλαράκια άγριας ρόκας συνθέτουν μια «νεκρή φύση» αντάξια των μεγάλων καλλιτεχνών των ελληνιστικών χρόνων. Το φαντάζομαι σε ψηφιδωτό σε βίλλα του Ερκολάνο, δίπλα στην βιβλιοθήκη με τους παπύρους του Επίκουρου.

In addition to the taste, the dish is colorful and a delight of the eye. It could become a painting and decorate a villa near Ercolano.

Μια επίσκεψη στο «Βαρούλκο» αξίζει και μόνο για αυτό το πιάτο, που πανάξια ανήκει στην υψηλή Μεσογειακή κουζίνα.

Visit Varoulko to taste this dish, but call ahead, as it is not on the menu every day.

 

Taverna Strofi, Perama, Attica, Greece – Ταβέρνα Στροφή, Πέραμα, Αττική

Taverna Strofi is in Perama, a remote neighborhood of the port of Piraeus.  “Pera” in Greek means “far”. The name of the area literally means the “far away place”. I will let the photos describe the food. Service is good, and value for money above average.

Seafood in the Arabesque Restaurant of Jerusalem’s American Colony Hotel

David Dides is the Executive Chef of the Arabesque Restaurant in American Colony, a beautiful hotel in Jerusalem.  I visited the restaurant recently and enjoyed seafood in the middle of winter. David is very fond of the sea, having Greek roots.

The first dish was a sea trout tartar, on a bed of cracked wheat, served with an ostrich’s egg, capers, fresh greens and fried artichoke, “alla Judea”. The trout was so sweet, it needed the capers to counter the flavor.  This was the case until I tasted the artichoke. It was a powerhouse of salty and acid flavors and when combined with the trout it lifted the dish to heights I could not have imagined. The cracked wheat offered the best neutral background to the symphony of flavors of the dish.

The second dish was something tasty and extremely light. Red mullet fillets fried “tempura style” and served on a bed of a light risotto with saffron and gentle spices. Before I describe the dish, I would like to note that “red mullet” is known as “Sultan ibrahim” in the middle east, apparently because it was the Sultan’s favorite dish.    I may not be a Sultan (in my current incarnation) but I also like red mullets, and David’s dish is now one of my absolute favorites. First of all, the tempura was executed in a perfect way, making the fillets soft, juicy, delicious and light, very light. The risotto complemented the fillets in a subtle way, without overpowering the taste of the fish. Another interesting aspect  of the dish was the slices of fresh orange, which provided enough acidity to counter the “oily” touch of the tempura.
