I continue to be in the “breaking wave” mood, in spite of the fact that the first autumn rain drops pelted the dry soil since yesterday.
Three and a alf years ago I wrote about Nikos Varverakis’ tavern in New Epidavros.
Today I return to find the same values and, fresh seafood, fresh as ever, and cooked with respect to Nature.
It is only natural to visit Nea Epidavros (a small village 20 km northeast of Palea Epidavros) and Nikos Varverakis’ tavern after a visit to the Theater and the Asclepeion in Palea Epidavros.
The first thing I asked for was the octopus. I remembered that last time I had tasted it simmered in wine and it was delicious.
I was not disappointed. First of all, the octopus was small, which means fished locally. Second, the head was “dirty”, which means untouched, with all the delights of the sea left intact.
This is the reason why seafood is better consumed fresh. Can you imagine eating a frozen octopus with a “dirty” head? I cannot.
However, it is not enough to have a really fresh small octopus. Cooking it is a real challenge, as it can be so easily destroyed.
Nikos is a master in simmering the octopus in wine until it reaches perfection. The sauce was so good, that whatever was left I ate with the fish!
The greens that accompanied the fish were vlita, boiled to perfection, served with real olive oil.
One of the most abused greens, vlita, when fresh and young is so tender that it is usually overboiled and destroyed, losing its colour to a murky muddy green-grey.
Not in Nikos’ tavern. Silky leafs, melting in your mouth, with tasty olive oil that dressed them adequately to the extent that no lemon was needed.
Now to the fish. Nikos recommended – and of course I accepted – fried cod.
Cod fished in the local waters is a small fish, nothing compared to the 5-10 kg fish of the Atlantic.
It is tasty, has very few bones, but it has to be super fresh, otherwise it is no good.
Not to mention the frying. The oil has to be “fresh” because the flavor of the flesh is very subtle. A reused oil can spoil a perfectly good fish.
Not in Nikos’ tavern.
The cod was fried to perfection, and it was so fresh that I could literally see the gelatin flowing out of the fish.
Needless to say, I will – one day – return.

Today’s dish belongs to the minimalist school, and as such requires tender loving care for the flavors and the textures. It is my own creation, and I am sure that if you like the ingredients, you will love the dish as much as I do.
Although it is the middle of October 2011, I had in the freezer a bag with fresh string beans and in the middle of a rainy dark day I felt the urge to cook them. I cook them lightly in boiling salted water so that they remain crunchy. I love the texture of string beans and immensely enjoy the crunch. After boiling, I let them cool off in room temperature.
The day before I had put in fresh water two fillets of salted bacalao to desalinate. The marriage was inevitable, even though it was not the result of a plan, but of sheer coincidence. I have learned from my Basque friends to prepare the bacalao in low heat with the skin down, so I cut the fillets in pieces.
Both ingredients are best friends with garlic, so the next step was to chop plenty of garlic. I like very much the combination of garlic and chilli, so I chopped some chilli peppers and through them in a deep pan with the garlic and olive oil.
I place the pieces of bacalao on top and let it cook in low heat, so that all the natural juices of the fish mix with the garlic and the chilli in a mild way that preseres natural flavor to the maximum.
After 10 minutes the fish is ready and there is a fantastic sauce in the pan that is going to dress the beans.
Serve the dressed beans in a deep dish and put on top a piece of bacalao. Enjoy with a “Asyrtiko” white wine from the island of Santorini in Greece.
Today I proudly present a dish I prepared in honour of my uncle George and my aunt Gail. Its name is Palmyra, for reasons not known yet to the human species.
I got some really fresh crawfish from my fishmonger, and had already in store some excellent salted cod.
So I decided to bring them into matrimony, with the help of funghi porcini that had just arrived in my kitchen.
I boiled the crawfish heads and legs, while I lightly marinated the tail in extra virgin olive oil, a little lemon, and salt.
I added the crawfish stock to the funghi and let them loose the extra moisture, while absorbing the flavour.
A few centimeters away, I put a lot of olive oil in a deep pan, added some garlic, and after it got to about 50 degrees, I added the cod and let it “boil” there.
In the meantime, I added butter to the funghi and after I took the pan off the heat, I added the tails and let them there for 60 seconds.
To plate the dish I added somechopped parseley and served.
The sweetness and tenderness of the crawfish tails, countere balanced the ferocity of the funghis’ earthy flavours, while the sublime cod fillet played the role of the mediator.
P.S. Next time I ill add more garlic ot the funghi.
The protagonist of this post is bacalao, or cod. The trigger was the proximity of two important dates in the Greek Calendar: The 25th March, which is the National Revolution Day in Greece, and Palm Sunday. The Greek tradition has it that on both dates we eat salted cod with garlic sauce or aioli.
The idea here is to present some of the highlights of my “bacalao” experience and some of the ideas that I have seen and appreciate, even though I have not tasted the dish yet.
The massive fishing of cod in Newfoundland supplied the European populaiton with the salt dried fish that nurtured generation after generation of people who would otherwise would not have been able to buy and eat fish. In Greece this was also the case. Fresh fish and seafood in Greece was and still is expensive and hard to get, as the quantities are small. The only way a lot of people could eat fish was to import the salt dried cod from abroad.
No lets get to the fish and the dishes.
I will start with some photos of the raw material and then go to the dishes.
You can eat bacalao fresh. The head picture comes form La Boqueria, the Central Market in Barcelona. The filet picture comes from La Bretxa, the Central Market in San Sebastian.
The second filet photo is from my kitchen. You can easily notice the difference in the size of the fish in Spain and in Greece! Not to mention the price. In Greece the fish – even in today’s lousy market conditions – sells for more than 20 Euros per kilo, in Spain it sells for 14 Euros per kilo of filet!
Salted bacalao can be delicious, but is not always. It depends on the quality of the fish and the time of curing and preserving. In any case, the best salted bacalao comes from Spain. I have one shop in Barcelona and another in San Sebastian, where I buy salted bacalao. Superb quality, specialization to the task, they sell more than 15 different cuts of salted bacalao.
Bacalao Wafer
I start the bacalao dishes with one of the most delicious bacalao dishes I have ever tasted. It is Martin Berasategui’s wafer of lightly smoked bacalao, served with a wonderful parmesan sauce, hazelnuts, coffee and vanilla. The thin slice of the fish rests on a puree where the taste and flavor of parmesan cheese is prominent. The fish actually dissolves into the puree and the combination is inspiring!
Esquisada di Bacala
This is a wonderful dish, it is so simple and so difficult at the same time! I tasted it in Ristorante Uliassi, in Senigalia, Italy. Raw cod chunks (salted cod from San Sebastian in the Basque Country, quite possibly the best in the world), with potatoes, pendolini tomatoes and basil.This is a hymn to primary ingredients of the best quality, as the cod’s texture is supplemented by the sweetness of the potatoes and the incredible acidity of the small tomatoes that have been blessed by the volcanic soil of Vesuvius.
Bacalao Tripe
The tripe of bacalao is one of the delicacies I discovered in Cataluna. What a great taste!
Another great dish from Mauro Uliassi (Ristorante Uliassi) Sea Urchin Eggs with bacalao tripe dish. The velvety texture and mild, soothing flavors of the tripe, contrasted with the intensity of the flavors in the sea urchin eggs, creating an unforgettable experience.
I have not yet tasted Carlo Cracco’s (Ristorante Cracco, Milano, Italia) bacalao tripe with rabbit and salmon’s roe, but this recipe definitely can give me a huge appetite, even by reading it.
La Cocina Plural’s Bacalao Tripe with Artichokes and Robellones Mushrooms, reminds me a an excellent dish I tasted in Barcelona’s “Els Pescadors” Restaurante, but instead of mushrooms it was served with rice.
A trio of tastes, grilled, vizcaina and pil pil, served in the Boroa Retaurant, near Bilbao.
Bacalao Cheeks – Kokotxas
This is one of the best recoveries I have made in the great country of the Basques, the Kokotxas! They are the cheeks of the cod (or hake) and are unbelievably soft, velvety smooth in texture, and full of the gelatin of the fresh fish.
The other great Land, Cataluna is also very fond of kokotxas, so here I have a photo taken from the Boqueria market in Barcelona.
This is simply fried cod. I tasted it in the Fishtavern Aristodimos in Pachi, near Megara, some 40 km west of Athens. As you can see the fish is fresh, and small. Overall, cod in Greece is small, the size rarely goes over 2 kilos. The fish is cut in small pieces and fried in olive oil. Here what matters the most is the technique of the cook, so that the fish is juicy inside, and crispy outside. This case was a success.
This is my recipe, based on my love for the two key ingredients: the bacalao and estragon.
Many more dishes could be here, but this is not the point.
The point is that like every great food, bacalao is the source of inspiration for many great chefs of the world, and pleasure for the millions of people enjoying it in their meals.
One of the minimalist school dishes that I have created, slow cooked bacalao fillets in a sea of garlic and red chilli peppers, served on top of steamed crunchy string beans.
Σημερα παρουσιαζω μια νεα συνταγη, που ειναι κατ εξοχην καλοκαιρινη αλλα ακομα και τωρα μπορει να “παιξει” ειδικα στις νοτιωτερες περιοχες.
Ειναι ενα ρολο, που η κυρια μαζα του ειναι αρμυρα, ενω στον πυρηνα βρισκουμε λαχταριστο μπακαλιαρο. Το περιτυλιγμα ειναι υπεροχα φυλλα απο σεσκουλα.
Παμε λοιπον. Το ψαρι πρεπει να ειναι τουλαχιστον ενα κιλο, για να εχει αρκετη σαρκα που μπαινει στον πυρηνα του ρολου. Κοβουμε τον μπακαλιαρο σε κομματια αρκετα μεγαλα για να μπορεσουν να σωταριστουν μαζι με σκορδα και φρεσκα κρεμμυδια. Δεκα λεπτα το πολυ.
Η αρμυρα βραζει για δυο λεπτα ακριβως, οχι παραπανω, και πρεπει να ειναι πραγματικα φρεσκια.
Αφου κρυωσει η αρμυρα, προσθετουμε αβγα, αλατι και πιπερι, λιγο μπεικον καψαλισμενο και μια χουφτα πληγουρι.
Στο μεταξυ εχουμε ζεματισει τα περηφανα πλατεια φυλλα απο τα σεσκουλα, και τα εχουμε απλωσει στο λαδοχαρτο για να υποδεχτουν την γεμιση. Θυμιζω οτι τα φυλλα αυτα ειναι το περιτυλιγμα.
Στη συνεχεια πλαωνουμε την αρμυρα με τα προσθετα, και στο μεσο βαζουμε την τρυφερη σαρκα του μπακαλιαρου.
Τα ζουμακια που βλεπετε ειναι καλοδεχουμενα, γιατι θα οδηγησουν σε ζουερο και ευγεστο αποτελεσμα. Με μετρο βεβαια!
Τυλιγουμε στο λαδοχαρτο και φουρνιζουμε σε πολυ δυνατο φουρνο για 20 λεπτα.
Today I want to share the fantastic Basque recipe of bacalao pil pil. I do not try to give an english name, there is no point. Once you taste it, you will remember it with or without name!
Σημερα παρουσιαζω μια υπεροχη αυθεντικη και εντελως φυσικη συνταγη απο τη μεγαλη χωρα των Βασκων με το ονομα bacalao pil pil. Η αποδοση στα ελληνικα ειναι “μπακαλιαρος πιλ πιλ”. Ο πλησιεστερος ελληνικος ορος θα ηταν ηπια συβραση (τα σκορδα με τον μπακαλιαρο) αλλα δεν τον θεωρω δοκιμο.
I tried this dish in San Sebastian at the beginning of the 21st century, and I have since fallen in love with it. As every dish, it requires top quality ingredients, in this case salted cod (bacalao) and the special cut with the name (surprise) “pil pil”. In case you cannot find the cut (impossible outside Spain) buy the best quality fillet.
Δοκιμασα για πρωτη φορα αυτο το πιατο στο Σαν Σεμπαστιαν στις αρχες του 2000 και απο τοτε το εχω ερωτευτει. Οπως καθε καλο πιατο με ψαρι, απαιτει την καλυτερη πρωτη υλη. Εν προκειμενω η πρωτη υλη ειναι φιλετο αλατισμενου μπακαλιαρου που στην ελλαδα μας ειναι δυσκολο να το βρουμε. Αγοραζουμε λοιπον τον καλυτερο αλατισμενο μπακαλιαρο που μπορουμε να βρουμε και κοβουμε το πιο χοντρο κομματι απο το φιλετο.
What you see in the picture is the real cut I bought from San Sebastian, accompanied by the second most important ingredient, garlic!
Αυτο που βλεπετε στην φωτογραφια το αγορασα απο το Σαν Σεμπαστιαν και το διετηρησα στην καταψυξη. Διπλα στα φιλετα βλεπετε το ετερον σημαντικον και ουσιωδεστατον συστατικον, σκορδακι μυρωδατο και τσαχπινικο, ετοιμο να κατακτησει με τα αρωματα του και τον πλεον δυσκολο πελατη!
The recipe is a lesson in physics and chemistry.
Η συνταγη βασιζεται στους νομους της φυσικης και της χημειας.
Take a deep frying pan (that has a thick enoough bottom that absorbs and keeps the heat) pour a lot of olive oil and garlic cloves and keep the fire at low-medium level (3 out of 10). Once it starts sizzling, add the filets with the skin down.
Παιρνουμε ενα τηγανι με πατο (δηλαδη οχι αυτα που ειναι σα φλιδα, αλλα εκεινα που η βαση τους ειναι αρκετα παχια για να μπορεσει να αποθηκευσει πολλη θερμοτητα στη διαρκεια του μαγειρεματος). Ριχνουμε αφθονο ελαιολαδο στο τηγανι, αφθονα σκορδα και αναβουμε τη φωτια στο 3/10. Αμεσως μετα, τοποθετουμε τα φιλετα με την πετσα να ακουμπα στο τηγανι.
Immediately start moving and shaking the pan so that the fillets do not stick. Keep doing this, do not be lazy, it is the secret to the success of the dish! After 3-4 minutes the olive oil starts thickening, as it mixes with the gelatin of the fish. Do not increase the heat, keep it medium.
Αμεσως μετα αρχιζουμε να τσουλαμε το τηγανι – σερνοντας το στην επιφανεια της κουζινας, για να μην κολλησει το φιλετο. Μετα απο 3-4 λεπτα το λαδι αρχιζει να πηζει, αφου η πετσα αι η σαρκα κατα δευτερο λογο εκρεουν το φυσικο ζελε που περιεχουν. Η ρυθμιση της φωτιας ειναι ιδιαιτερα σημαντικη, αφου αν ειναι πολυ δυνατη το ζελε θα στερεοποιηθει και θα γινει μια μαυριλα, ενω αν η φωτια ειναι χαμηλη, θα φτιαξουμε μια ωραια σουπα.
While the sauce keeps thickening, add a couple of chili peppers to enhance the flavor. After 10 minutes (without touching or turning the fillets) the dish is ready. You may use a spoon to pour the sauce over the fillets but nothing more than that!
Στο μεταξυ εχουμε προσθεσει καυετερες πιπεριες για προσθετο αρωμα και σε 10 λεπτα το ελαιολαδο εχει σχεδον πηξει. Προσοχη, σε καμια περιπτωση δεν γυριζουμε τα φιλετα! Αν θελετε ριχνετε με ενα κουταλι το ελαιολαδο απο πανω, αλλα γυρισμα ποτε και για κανεναν!
Let the flavors settle for 5 minutes and serve.
Μετα απο 15 (συνολικα) λεπτα σερβιρουμε.

Ο μπακαλιαρος αυτος ειναι καλυτερος απο αστακο! ( ενταξει, μια μικρη υπερβολη, αλλα δικαιως).
Η σαρκα ειναι μεστη, σφριγηλη και πεντανοστιμη!
The olive oil sauce is divine, the garlic subtle and moderate. The garlic is like comfit, and melts in your mouth.
Η σαλτσα με το ελαιολαδο, το ζελε και τα σκορδα, εχει γινει αριστουργημα, με την καυτερη υποκρουση που εδωσαν οι πιπεριες αλλα και την ευγενεια του ελαιολαδου στο γευστικο βαθος, ενω το σκορδο αποδιδει ολη την γκαμα των αρωματων του με αιδω και φειδω.
In some recipes they suggest throwing potatoes in the dish and other things. I do not suggest such a thing, keep the dish simple and avoid the bastardization. Enjoy each bite like a sip of a good wine, let it drive you crazy before you swallow.
Σε καποιες συνταγες λενε να βαλουμε πατατες και αλλα παρελκομενα. Σας προτεινω να μην βαλετε τιποτε αλλο! Απολαυστε καθε μπουκια με αργοσυρτη κινηση οπως τα πλυντηρια ρουχων πανε μια γυροβολια τα ρουχα μεσα στον καδο. Σχεδον σα να πινετε ενα καλο κρασι. Μην βιαστειτε να καταπιειτε την τροφη, αφηστε την να τρελανει τον ουρανισκο και να απαγαγει την γλωσα σας!
A white wine with a lot of body is a must.
Ενα καλο σαβατιανο κρασι ειναι οτι πρεπει, γιατι ειναι διακριτικο και συνοδευει με σεβασμο αυτο το θαυμα της φυσεως.
Η Παχη ειναι ενα μερος μαγικο, αφου μολις περασεις το στρατοπεδο βρισκεσαι μπροστα σε μια υπεροχη παραλια κι ενα λιμανακι μουρλια, γεματο ψαροβαρκες και ολιγα κοτεροειδη.
Ψαροβαρκες παντου, κι ενα κουκλι στη μεση, με ενα κλωναρι συκιας να αιφνιδιαζει τους παντες και να τεινει χειρα φιλιας στο κουκλι!
Παραδιπλα, βρισκεται ο Αριστοδημος, ψαροταβερνα που μεσα στην απλοτητα και ελλειψη επιτηδευσης μπορει να κλεισει με υπεροχο τροπο την βολτα!
Κι αν δεν φυσαγε τοσο πολυ θα τρωγαμε στο μπαλκονι επανω.
Θυμηθηκα τα ανγνωσματα απο τα παλατια του Σουλτανου, που μπερδευανε σκοπιμα τα γλυκα με τα αλμυρα πιατα! Εδω το καλαμαρι ειναι γλυκισμα, φρεσκο μεχρι εξοντωσεως, τηγανισμενο στην εντελεια με ενα αρωμα αφατης λεπτοτητας!
Ραδικια της αποπλανησης
Τα ραδικια με την συγκρατημενη πικρα της επιγευσης ειναι για την αποπλανηση του ουρανισκου που μετα την μεταξενια υφη παραξενευεται απο την πικρα.
Ο μπακαλιαρος σερβιριστηκε τηγανητος ως κουφετο απο βαφτιση!
Η καταλευκη σφριγηλη σαρκα με την ευωδια της θαλασσας σε οδηγει στην απωλεια! Πως θα επιστρεψεις μετα στην κανονικη ζωή;
Κι ολα αυτα μολις 40 ανετα χιλιομετρα απο την Αθηνα. Στην επιστροφη ενοιωθα οτι γυριζα απο πολυημερες διακοπες.
Σημερα παρουσιαζω ενα πιατο παναλαφρο αλλα και πολυ νοστιμο, με μπακαλιαρο και εστραγκον.
Αφιερωμενο εξαιρετικα στην επικουρεια Ιουστινη Μοντρε Αλος, που ειχε προσφατα τη γιορτη της.
Εν αρχη ην η αγορα. Φρεσκωτατος μπακαλιαρος.
Ακολουθει το κοψιμο του κεφαλιου και το φιλεταρισμα του ψαριου.
Κοβουμε τα φιλετα σε κομματια περιπου τετραγωνα, αλατιζουμε με χοντρο αλατι και βαζουμε στο ψυγειο.
Το κεφαλι και τα κοκκαλα θα φτιαξουν τον ζωμο για την υπεροχη σαλτσα του πιατου. Οπως παντα στο ψαρι, ενα κρεμμυδι και λιγο σελινο στο βρασιμο ειναι η εγγυηση για θεικη γευση.
Καθως βραζουν τα υλικα αυτα, ετοιμαζουμε το μαξιλαρακι για τον μπακαλιαρο.
Παιρνουμε μετριες σε μεγεθος πατατες και τις τριβουμε σε χοντρο τριφτη. Αλατιζουμε με χοντρο αλατι και προσθετουμε ψιλοκομμενο εστραγκον. Σουρωνουμε καλα και πιεζουμε τη μαζα της τριμενης πατατας για να φυγουν τα υγρα.
Μετα βαζουμε το μιγμα σε φορμακια οπως στη φωτογραφια και ραντιζουμε με ελαιολαδο.
Ψηνουμε σε φουρνο 250 βαθμων Κελσιου για 15 – 20 λεπτα. Η βαση του μαξιλαριου πρεπει να ειναι τραγανη και η ολη μαζα να ειναι ψημενη αλλα οχι στουμπος!
Βγαζουμε απο το φουρνο, προσθετουμε ενα κομματι μπακαλιαρο και βαζουμε στο φουρνο στο γκριλ για 10 λεπτα.
Καθως ψηνεται το ψαρι, ετοιμαζουμε την σαλτσα μας.
Σουρωνουμε τον ζωμο σε ρηχο τηγανι, προσθετουμε αφθονο εστραγκον και ολιγο αλευρακι για να δεσει η σαλτσα. Το τελειωμα σε μιξερακι για να παρει και χρωματακι απο το εστραγκον.
Βγαζουμε τις φορμιτσες (σημειωτεον οι φορμες δεν εχουν πατο!) απο το φουρνο και σερβιρουμε.
Τωρα που ειδατε τι ωραιο και καμαρωτο ειναι το πιατο μας, μπορουμε να βαλουμε και την θεικη σαλτσα.
Το πιατο αυτο αναδεικνυει το ψαρι, που ειναι ζουμερο, μελωμενο απο το ψησιμο στο γκριλ, και δενει με την τριμμενη πατατα και την σαλτσα δημιουργωντας ενα γευστικο και ελαφρυ πιατο. Τον τονο ομως δινει το ονειρικο εστραγκον, εξ ου και βρισκει τη θεση του στο ονομα του πιατου!
