Aristotle, Athinaeos, Tuna, and…. (Ο Αριστοτέλης, ο Αθήναιος, ο Τόνος, και… )

Εισαγωγή

Ένα από τα αγαπημένα μου ψάρια είναι ο τόνος. Λατρεύω το χρώμα της νωπής του σάρκας, αυτό το βαθύ πορφυρό. Η γεύση και η υφή του, είτε ωμός είτε μαγειρεμένος είναι μοναδική, το δε υπογάστριο εκλεκτό.

Σήμερα πάμε ταξίδι πολλά χρόνια πίσω, να συναντήσουμε τον Αριστοτέλη, τον Αθήναιο και μαζί τους τον υπέροχο τόνο. Με την ευκαιρία θα συζητήσουμε την ετυμολογία της λέξης, και διάφορα σχετικά  γαστρονομικά .

Introduction

This post is about one of my favorite fish, the tuna, as it has been described by Aristotle and Athinaeos.

On the occasion of this trip to the past, I also explore the etymology of the word.

Ετυμολογία

Ο νεοελληνικός «τόνος» προέρχεται από τον αρχαιοελληνικό «θύννο».

θύννος, ο, τόνος,  μεγάλο ψάρι, που τρώγεται στη Μεσόγειο.  Αναφέρεται στον Ηρόδοτο, τον Αισχύλο, κλπ. (λεξικό Liddell & Scott)

Ο «θύννος» σαν ουσιαστικό, προέρχεται με τη σειρά του από το ρήμα «θύνω» (θυνέω, θύω), που σημαίνει ορμώ, σπεύδω, ή εφορμώ εναντίον.

Ο «θύννος» λοιπόν, έγινε «τόνος» στη νέα ελληνική, “tuna” στην Λατινική, “tuna” στην Αγγλική, “tonno” στην Ιταλική, “atun” στην Ισπανική, “atuna” στην βασκική, “tonyina” στην Καταλανική, “thon” στην Γαλλική, “Thunfisch” στην Γερμανική, “tun” στην Δανική, “tonnikala” στην Φινλανδική, “tonfisk” στην Σουηδική, “tunfisk” στη Νορβηγική, «ton balığı» στην Τουρκική. Από την απαρίθμηση  είναι προφανές ότι η αρχαιοελληνική λέξη επικυριαρχεί στις περί την Ευρώπη γλώσσες, κάτι που δεν είναι συχνό στις ονομασίες των ψαριών.

Ομολογώ ότι μέχρι να διαβάσω τα αποσπάσματα περί τόνου, δεν είχα ποτέ φανταστεί ότι ο Αριστοτέλης έγραψε για ψάρια, και μάλιστα με τέτοιες λεπτομέρειες. Όπως συνήθως συμβαίνει σε τέτοιες περιπτώσεις ‘ιερών τεράτων’, ο Αριστοτέλης  συνέγραψε ένα τεράστιο έργο περί ζώων. Θα μου επιτρέψετε (ελπίζω) να παραπέμψω σε μια μεγάλη παράγραφο από μια βιβλιοκριτική του Παντελή Μπουκάλα, επειδή κατά την γνώμη μου αποδίδει εξαιρετικά το ποιος ήτανε αυτός ο κολοσσός της σκέψης.

«Ένας πανεπιστήμονας ολκής που η μονίμως ανικανοποίητη όρεξή του για το ειδέναι τον οδήγησε να καταπιαστεί –και με την ίδια πάντοτε προσοχή και επιμέλεια– με τα φαινομενικώς τιποτένια και με τα προδήλως βαρυσήμαντα: από τον πολλαπλασιασμό του γαλεού φερειπείν, την κίνηση των σιαγόνων του κροκόδειλου («κινεί δε πάντα τα ζώα την κάτωθεν γένυν, πλην του ποταμίου κροκοδείλου· ούτος δε την άνω μόνον» υποστήριζε στο Περί τα ζώα ιστορίαι) και τα όνειρα (κάποιοι, έγραφε στα Μικρά Φυσικά, «ονειρεύονται ότι γεύονται μέλι και γλυκούς χυμούς μα στην πραγματικότητα καταπίνουν απλώς μικρή ποσότητα φλέγματος»), έως τα άστρα, την ποίηση και την ψυχή· είναι τόσο το εύρος και τέτοιο το βάθος της σκέψης του, τόσος ο πνευματικός αλλά και ο φυσικός κάματος που προηγήθηκε για να κατορθωθούν, ώστε να τον φανταζόμαστε να βγαίνει στον διανοητικά απολαυστικό και γόνιμο περίπατό του ακόμα και στο σκοτάδι, σαν ένας παράδοξος, εν πλήρει εγρηγόρσει νυκτοβάτης, για να μη χαθεί εργάσιμος χρόνος.» (2)

Για να δούμε λοιπόν τι έγραψε ο Αριστοτέλης για τον τόνο στο πολύτομο έργο του «Των περί τα Ζώα Ιστοριών», γύρω στο 350 π.Χ.

«Εἰσπλέουσι δ’ οἱ θύννοι ἐπὶ δεξιὰ ἐχόμενοι τῆς γῆς, ἐκπλέουσι δ’ ἐπ’ ἀριστερά· τοῦτο δέ φασί τινες ποιεῖν ὅτι τῷ δεξιῷ ὀξύτερον ὁρῶσι, φύσει οὐκ ὀξὺ βλέποντες. Τὴν μὲν οὖν ἡμέραν οἱ ῥυάδες κομίζονται, τὴν δὲ νύκτα ἡσυχάζουσι καὶ νέμονται, ἂν μὴ σελήνη ᾖ· τότε δὲ κομίζονται καὶ οὐχ ἡσυχάζουσιν. Λέγουσι δέ τινες τῶν περὶ τὴν θάλατταν ὡς ὅταν τροπαὶ χειμεριναὶ γένωνται, οὐκέτι κινοῦνται ἀλλ’ ἡσυχάζουσιν, ὅπου ἂν τύχωσι καταληφθέντες, μέχρι ἰσημερίας.» (1 α)

«Οι τόνοι εισπλέουν (στον Εύξεινο Πόντο)  από τη δεξιά μεριά, έχοντας την ακτή κοντά τους, εκπλέουν δε από την αριστερή μεριά. Αυτό το κάνουν επειδή η όραση τους είναι καλύτερη στο δεξί μάτι. Στη διάρκεια της ημέρας ταξιδεύουν, και την νύκτα ησυχάζουν και τρέφονται, αν δεν υπάρχει σελήνη, οπότε ταξιδεύουν και δεν ησυχάζουν» (η απόδοση είναι δική μου).

«Οἱ δὲ θύννοι καὶ οἱ ξιφίαι οἰστρῶσι περὶ κυνὸς ἐπιτολήν· ἔχουσι γὰρ ἀμφότεροι τηνικαῦτα παρὰ τὰ πτερύγια οἷον σκωλήκιον τὸ καλούμενον οἶστρον, ὅμοιον μὲν σκορπίῳ, μέγεθος δ’ ἡλίκον ἀράχνης· ποιοῦσι δὲ ταῦτα πόνον τοιοῦτον ὥστ’ ἐξάλλεσθαι οὐκ ἔλαττον ἐνίοτε τὸν ξιφίαν τοῦ δελφῖνος, διὸ καὶ τοῖς πλοίοις πολλάκις ἐμπίπτουσιν. Χαίρουσι δ’ οἱ θύννοι μάλιστα τῶν ἰχθύων τῇ ἀλέᾳ, καὶ πρὸς τὴν ἄμμον τὴν πρὸς τῇ γῇ (602b.) προσχωροῦσι τῆς ἀλέας ἕνεκεν, καὶ ἄνω ἐπιπολάζουσιν ὅτι θερμαίνονται.» (1 β)

“Οι θύννοι και οι ξιφίες έχουν  οίστρο, όταν ανατέλλει ο αστερισμός του κυνός. Τότε δηλαδή και οι δύο έχουν δίπλα στα πτερύγια τους σαν σκουληκάκι τον λεγόμενο οίστρο, που μοιάζει με σκορπιό, αλλ’ έχει το μέγεθος της αράχνης. Αυτό τους κάνει να πηδούν όχι λιγότερο από το δελφίνι. Πολλές φορές πέφτουν πάνω στα πλοία.» ( η αναφορά στο  εδάφιο αυτό γίνεται από τον Αθήναιο, βλέπε 3, 64.)

Υπάρχουν και άλλες αναφορές στον τόνο στο έργο του Αριστοτέλη, που δίδουν περισσότερες λεπτομέρειες και περιγραφές για τις συνήθειες του τόνου και συναφών ψαριών.

Δεν γνωρίζω αν κάποιος άλλος φιλόσοφος έχει γράψει για τον τόνο. Κάπου πήρε το μάτι μου ότι ο Σάρτρ μια εποχή ετοίμαζε ένα βιβλίο με συνταγές μαγειρικής και είχε ανάμεσα σε αυτές και  «μαγειρευτό τόνο». Εκφράζω βέβαια την βαθύτατη μου συμπάθεια προς τον μεγάλο Γάλλο Υπαρξιστή, ο τόνος ραγού δεν είναι εύκολη υπόθεση. Προς επιβεβαίωση, παραθέτω ντοκουμέντο από την κουζίνα της Trattoria Piccolo Napoli στο Παλέρμο της Σικελίας, μεγάλης μάνας του τόνου.

Εκεί ένα όμορφο μεσημέρι, όντας ο μοναδικός μη εντόπιος (ή ο μόνος εγχώριος κατά την μούσα «Α») γεύτηκα ένα ραγού τόνο  που θα μου μείνει αξέχαστος. Τι να ήτανε άραγε ο διαφοροποιός παράγων;  Η οξύτητα της ντομάτας; Η νοστιμιά του τόνου;  Ποτέ δεν θα το μάθω.

Ήτανε πάντως ένα ραγού μοναδικό.

Θα ήθελα πάρα πολύ να είναι μαζί μου το υπέροχο εκείνο μεσημέρι ο Αριστοτέλης. Πρώτον διότι η διαίσθηση μου μου λέει ότι θα απολάμβανε το γεύμα. Και δεύτερον επειδή είμαι βέβαιος ότι θα συνέγραφε γαστρονομικό οδηγό για την Σικελία!

Ο Αθήναιος

Περνάω τώρα από τον Σταγειρίτη στον Αθήναιο, που σχεδόν 6 αιώνες μετά συνέγραψε το πολύτομο έργο «Οι Δειπνοσοφιστές». Ενώ η επικρατούσα άποψη θεωρεί ότι ο Αθήναιος ήτανε ο πρώτος συγγραφέας γαστρονομίας της Ελληνορωμαϊκής εποχής, κατά μίαν άλλη άποψη, ήτανε ο συγγραφέας της «χαράς της ζωής». Οι εκδόσεις ΚΑΚΤΟΣ και ο Θεόδωρος Γ. Μαυρόπουλος τόλμησαν και εξέδωσαν και τους 15 τόμους του πονήματος. Από αυτή τη μνημειώδη έκδοση  θα πάρω κι εγώ κάποια αποσπάσματα.

Πρώτα απόλα, στον Αθήναιο χρωστάω την ανακάλυψη ότι ο Αριστοτέλης συνέγραψε περί του τόνου.

Ο Αθήναιος κάνει πολλαπλές αναφορές στα υπογάστρια μέρη του τόνου.

«Ύστερα από αυτά, μας έρχονται πλούσια υπογάστρια ψητών θύννων» (3, 64)

Και εμφατικά τονίζει την σχέση του τόνου με το γουρούνι, μέχρι του σημείου να παραπέμπει στον Πολύβιο από τη Μεγαλόπολη, που μιλώντας για την περιοχή της Λυσιτανίας στην Ιβηρία , λέει ότι φυτρώνουν στο βάθος της εκεί θάλασσας βελανιδιές. Τον καρπό τους τρώνε οι θύννοι και παχαίνουν. (3, 64)

Με ενδιαφέρον παρατηρεί δε ότι ο όρος υπογάστριο χρησιμοποιείται μόνο για ψάρια και όχι για τα ζώα, όπως τα γουρούνια.

Ο δε Αντίγονος από την Κάρυστο αναφέρει μέχρι και θυσία θύννων στον Ποσειδώνα. (3, 66).

Ο Μένανδρος στους Αλιείς του λέει: “Θάλασσα γεμάτη βόρβορο, που τρέφει μεγάλο θύννο”. (3, 66)

Είχα την ευτυχία να γευθώ υπογάστριο θύννου στη Βαρκελώνη, στο Hotel Arts που φιλοξενεί το εστιατόριο του Sergi Arola. Το πιάτο – τάπας είχε το όνομα “FARM RAISED TUNA BELLY: marinated slices, goat cheese, Sichuan pepper and seeded bread croûtons ». Εξαιρετικό!

Επίλογος

Σήμερα δυστυχώς δεν υπάρχει φρέσκος τόνος στις Ελληνικές ιχθυαγορές. Κάτι τονάκια της δυστυχίας, εδώ κι εκεί. Πιασμένα στα δίχτυα καθώς πάνε σε πιο ψυχρά νερά για να μεγαλώσουν.  Είναι όμως τέτοια η λαχτάρα μου να γευθώ φρέσκο τόνο που απετόλμησα το μοιραίο και μαγείρεψα μια παραλλαγή της συνταγής “Beef Wellington”  του Gordon Ramsay. Το ονόμασα «Baby Tuna Wellington» και θα το παρουσιάσω κάποια μελλοντική στιγμή.

Panathinaeos Paintings III: Boats

My good friend Elaine reminded me that I have no comprehensive collection of my paintings on the web, and so I started to compile a third part, to complement the first two that I published some time ago.

The first set was about the island of Paros  (originally published on November 2008, updated on June 2013.)

The second set was about landscapes By the sea (originally published on January 2009, updated on June 2013.)

This third set is about fishing boats, one of my absolutely favourite painting subjects.

Please note that inevitably the grouping is not subject to “pure” partitioning rules.

A visit to Venice’s Fish Market – Part 2

This is the second part of the article on the Venetian Fish Market.
I start this with a Jackson Pollock painting, Lavender Mist. For some reason I have associated it with the cuttlefish photo that follows.

 I have never tasted this soft crab, but it looked so delicious that I was ready to buy it, eventhough I had no place to go and cook it. I tried to find it in the restaurants or trattorias without success.

The building that houses the market has beautiful arches that are fully “clothed” and create a more fresh atmosphere inside.

 I cought this sellet at a moment of rest, while she was munching some fruit.

Andra Mari Restaurant, Galdakao, near Bilbao

I found Andra Mari in the Red Michelin Guide and visited it last year (2007). I was positively impressed to the extent that I thought I just was lucky and everything turned out well during my visit. This year I visited Andra Mari again, wondering what the experience would be. I will try to describe it in this post.

The weathwer was gorgeous and I had the pleasure of eating al fresco in the veranda. Galdakao is a small town 10 km southeast of Bilbao, and is very easy to reach.

The view from the veranda is peaceful, and the air aviation enthusiasts can see all the airplanes as they approach the Bilbao airport, without suffering any noise effects, as they are still at a high altitude (I would say over 500 meters).

I had the “Andra Mari” Menu, which is the showpiece of the chef’s artistry and skill.

The start was “foie gras terrine with Pedro Jimenez Jelly”.

The second dish was “Sardine Fillets with roasted peppers and parmesan cheese”.

An apotheosis of colours followed, with the title “Grilled Summer Vegetables”.

The grilled lobster that followed was served with “Amaranto” risotto, which is in fact a cereal popular in South America.

What followed was my favourite dish a year ago. A cottage egg served with octopus. The richness of the egg combined with the octopus flavours will remain unforgettable.

The tuna loin that came next was a step down from the platform of excitement that the lobster and the octopus had built. I would nopt mind if it weren’t there at all.

To conclude they served a dish with Iberian pork cuts. The taste of the meat was superb, but the dish lacked the finesse and creative intensity of the previous dishes (excluding the tuna). I could live without it and have more lobster with the South American Cereal.

Deserts came next, starting with a junket with cherries.

To wrap things up they served a sponge cake with pears.

Overall, the experience was of the highest level, and in terms of value for money it tops the Basque Charts.

Andra MAri is now formly on my standard Basque Itinerary and for a very good reason. It serves excellent food at a very reasonable price!

Kollias Seafood Tavern in Piraeus, Greece

Kollias is a tavern in a working class neighbourhood of Piraeus, near Athens, Greece.
 
It may be the best seafood tavern in Greece.

The owner has given the tavern its name, and quite deservedly so. He is always there, meeting the customers, cooking, serving, chatting. He is the heart, the mind, everything.
 
I visited the tavern on a Friday, when thousands of people were departing from the port of Piraeus for their summer holidays. The tavern was open, Kollias was there and so were the customers. The food I was going to taste required a rather strong drinki, so I opted for ouzo from the island of Chios, named “Apalarina”.

The first dish was “Asparagus of the Sea”. They come from the island of Lefkada. Incidentally, I saw some “greens of the sea” similar to them in the fish market in Venice, but do not recall how they are called in Italian.

The taste of sea prominent, crunchy and enjoyable.

He then served “Stuffed Mushrooms”. They had cheese, shrimps and clams with white wine. Quite tasty.

When it came to the fish, the chef recommended “katsoules”, a fish very popular in Piraeus and the Saronic Gulf Islands. They are like flattened red mullets. They are very tasty and juicy, although they are considered to be a humble fish.

To wrap the meal up, the chef brought another “B” fish, from the sea lake of Messolonghi, called “stiradi”.

The fish was grilled in “butterfly” mode, as you can see in the picture. Lightly fatty, juicy, tasty, great choice!!!
